I wonder, if you have a microwave, could you somehow smuggle in a rice cooker or a crockpot? Those are rather small and would give you so many more options :/

Also, buy regular rice in bulk and cook it in the microwave like this. It's much less expensive. Beans, lentils, corn chickpeas are all great. Do you have a freezer? If yes you can buy cheap frozen veggies and just toss them in there. Try different and interesting spices! With cheap puréed tomatoes you can make sauce, just add in anything you like.
