Probably possible. Not sure if it would be worth it. A dash cam with motion detection and an additional battery might be enough to ease you worries. I had one installed and it makes me feel a little better.

So I got myself one of these A119 because it was on sale. HIghly recommend it. It's been working without a hitch for the last year and it's perfect for the heat because it's capacitor powered instead of battery powered like other dashcams. It's survived the California and Arizona heat so far. Just make sure to also get a hardy SD card since those things are more likely to fail.
/u/Sweetwind7 here is the new version of the cam that I have, the A119 V3 and here is the dual cam version, the A129 Pro, which comes with a rear cam too. WORTH the money cause they pay back many times over.
I have the new A119 V3 and per the manual this is what it says regarding the operating temperature: -10 ~ 65°C (14°F - 149°F):
That is to say it below it it may work or turn off, but once you get the car started and warmed up it will work.

The Tesla Sentry system: Front/Rear/Left Rear Mirror, Right Rear Mirror. - Tesla might have more cameras.
However, it is more for Tesla's Driver Assist feature (autopilot), and less for parking security or dash cam. - Tesla's Camera setup has all the cameras in the right places for parking mode. - However, the video quality of the cameras, is maximized for the Driver Assist functions, not capturing plates/faces for instance.

Anyways, the best rated heat are the Street Guardian line up. Since I don't particularly like or dislike Street Guardian, I don't look at their line up, except when people ask about extreme heat conditions. They could have newer dash cams, I would just be unaware of them.
Anyways, SGGCX2PRO, and Street Guardian SG9663DC are pretty standard advice. For better advice, look them up, and their other products.

Street Guardian either the SGGCX2 1CH, or SGGCX2Pro would be the most heat resistant, have the best video quality in extremely dark conditions.
A119 v2, B1W, and SGGCX2Pro are common answers.
A129 2CH, BlackSys/Thinkware/BlackVue models are as well.

The Viofo A119 V3 is available right now on amazon for $92.22 w/ free shipping. I don't have one myself but it seems to be regarded on here as having some of the best image quality you can get for the money. No subscription and it has a built-in capacitor to help prevent corruption should it get disconnected in an accident.
This one has a phone app that you can use to review footage.(CORRECTION: This does not have wifi and thus no phone app). Some people recommend taking out the SD card though and reviewing it that way as watching footage on a 2in. screen can obscure little details. Also to record when the car is shut off you'll want either a battery pack to power the cam or a hardware kit of some sort to connect to your car's battery and prevent the cam from completely draining it.Check out the recommended cams in the sidebar too and shop around most major websites for these to see what deals are available.

I got the A119 recently and it's great. I've had multiple dashcam brands in multiple vehicles over the years. The Viofo cams were generally the longest lasting (though I've never had an expensive cam like a Blackvue so can't comment on that). Also, they've recently stepped their game up in few things recently. First, the manual was the first manual i've ever gotten that didn't read like it was all Engrish and it was actually helpful. Second the V3 has really nice video quality. Third, it's pretty discreet. I have it high and tight next to the rear view mirror so it kind of looks like just a part of the assembly.
I didn't get the CPL one either. This is the one I got, if that's helpful to you. Not sure how useful GPS is going to be but thought it was worth it.

You should get a pair of A119 V3 with the GPS mount. My brother got one and the GPS mount is what you stick on the windshield and then you slide the camera on and off. Also, the power plugs into the GPS mount so you don't need to unplug it or plug it in...literally just slide it in.
Addtionally, it comes with the regular mounts which just are a piece of plastic that you stick on the windshield so you could use that on your third car. When you use that mount, the power cable plugs into the camera directly so you will have to do that extra little step. All you need is a third power cable or the hardwire kit they make for it. Or maybe even an extra usb cable to the cigarette lighter could work but I am not sure about that.
