I've made some slight modifications to this, mostly to make it easier to follow. I've also included steps that should be quite obvious to someone who's done any homebrewing before, but I wish someone had told me when I first started.

I'd link to the original, for the sake of attribution, but the user who posted this deleted their account not long after I wrote everything down.

This will produce a sweet fruit-mead (or melomel). WARNING this will be far more alcoholic than it tastes, and should not be consumed if you've recently taken antibiotics, or suffered gastric distress, as the yeast culture will still be alive, and will happily colonize your intestines if your gut microbiome is too fucked up.

Equipment: Most of this stuff will be a good deal cheaper at your local homebrew store, but I've included amazon links (also to the yeast).

At least 2 (3 is better, for reasons we'll get to) 1-gallon jugs (I don't recommend scaling this up), glass preferred. Add an extra jug for each additional batch. This one includes a drilled stopper and airlock

Drilled stoppers (or carboy bungs) and airlocks, non-drilled rubber stoppers.

An autosiphon and food-safe tubing.

Food-safe sanitizing solution (I recommend StarSan).

An electric kettle with temperature selector is useful, but not needed.

If you want to bottle it rather than just keeping a jug in your fridge:

Empty beer or wine bottles (just save your empties), capping or corking equipment, caps or corks, and a bottling wand.

Ingredients:

2.5 lbs (1130g) honey, clover recommended.

A cup (approximately 250ml) or so of fruit (I recommend blackberries, and I strongly recommend against cherries, other recipes have worked for me, but this yields a very medical flavor with cherries).

1 packet Lalvin EC-1118 yeast (a champagne yeast notable for its hardiness, its ability to out-compete other microorganisms, and its high alcohol tolerance).

Optional: potassium sorbate (to reduce yeast activity when our ferment is done), pectic enzyme (aka pectinase - for aesthetic purposes). Both are also available in bulk.

Process:

Day 1:

Mix sanitizing solution with clean water at specified proportions in one of your jugs, filling the jug most of the way. Stopper it, shake it. Remove stopper, set it down wet-side-up (to keep it sterile), pour the fluid to another jug. There will be foam left behind, this is fine, don't bother to rinse it or anything. At low concentrations this stuff is totally fine to drink, and won't ruin your fermentation or flavor.

Add honey to jug, all of it.

If you have a kettle, and your jug is glass, heat water to around 160F (71 Celsius), pour a volume into your jug roughly equal to the amount of honey present. Fix sterile stopper to jug. Shake until honey and water are thoroughly combined. The heat will make it FAR easier to dissolve the honey. Set aside for an hour or so while it cools. Add clean water 'til mostly full, leaving some room for fruit and headspace.

If you're missing a kettle, or using a plastic jug, this is gonna be a little harder. Fill most of the way with clean water (I recommend using a filter) leaving some room for fruit and headspace. Fix sterile stopper, shake 'til honey and water are thoroughly combined. This will take a while, and you will need to shake VERY vigorously.

At this point, you should have a jug mostly-full of combined honey and water. To this, add fruit (inspecting thoroughly for mold, don't want to add that). Then dump in a single packet of the Lalvin EC-1118 yeast, don't bother rehydrating it first or anything, it'll be fine going straight in. Add pectic enzyme if you have it (this does nothing to the flavor, it just makes the end product less cloudy). Stopper it up, shake it again. This jug now contains your "must" (pre-ferment mead).

Pour some sterilizing fluid in a bowl, put a carboy bung/drilled stopper in the bowl, with an airlock. Ensure full immersion. Let sit for a minute. Replace stopper with your bung/drilled stopper, affix airlock. Fill airlock with clean water, sanitizing fluid, or vodka. Rinse the stopper, fix it to your jug of sanitizing fluid.

Place must-jug in a dark place, I recommend a cabinet or closet.

Days 2-7:

Retrieve jug, give it a little jostle. Nothing so vigorous as to get your mead into the airlock, but enough to upset it. This is to release CO2 buildup, and to keep any part of the fruit from drying out. The foaming from the CO2 release may be very vigorous. Do this over a towel for your first batch. If the foam gets into your airlock, clean your airlock and reaffix it. Perform this jostling procedure at least once per day, more is better.

Day 8:

Final jostling, I recommend doing this in the morning.

Day 9:

let it sit, we want the sediment to settle.

Day 10: Time to get it off the sediment

Shake sterilizing fluid jug. Affix tubing to siphon. Put the siphon in the sterilizing fluid, shake the jug a little just to get the whole siphon wet. Siphon fluid into either a third container or a large bowl. This is all to sterilize both the inside and outside of your siphoning system.

Remove siphon from jug. Give it a couple pumps to empty it of any remaining fluid. Place siphon in your mead jug, leaving the end of the tubing in sterilizing fluid while you do this.

Take the jug that you just siphoned the sterilizing fluid from. Dump what fluid remains in it. Place the end of the tubing in this jug, then siphon the mead into it. Make no attempt to get the last bit of mead into your fresh container, it's mostly dead yeast and decomposing fruit.

Add potassium sorbate if you have it, stopper the jug, place it in your fridge.

Clean the jug you started in. Clean your siphon and tubing.

Day 11:

Let it sit

Day 12 or later: time to transfer again, or bottle it.

If you no longer have a jug full of sterilizing fluid, make one.

Repeat the earlier steps to sterilize the siphoning system, with a bottling wand attached to the end of the tubing if you want to bottle.

Sterilize your bottles or a clean jug, either with fluid or heat.

Siphon mead either into your bottles or jug. Stopper/cap/cork when done.

Put your jug/bottles in the fridge.

The yeast culture is still alive, and will continue to ferment. The fridge, and optional potassium sorbate, will merely slow this down. I recommend drinking any bottles within two months, to avoid a risk of bursting bottles. The mead should already be tasty at this point, but usually tastes much better after a couple more weeks.

Posted this on your r/vegan post, but I figure it might help someone here who might not otherwise see it.

You need to see an allergist. It sounds to me like you’ve got oral allergy syndrome, which is basically where you’re allergic to the pollens of foods that are in the same family or otherwise structurally similar. It’s not at all uncommon, but you need to see an allergist because you need to make sure there’s no underlying cause. Also, because OAS can be a bit, erm, unpredictable in that you don’t always realize that you’re eating something that will trigger your allergies, you will probably want to have an Epi-Pen and/or emergency inhaler in the event you have a severe reaction. If your allergist deems it a good idea, keep them on or near you at all times, and remember to get replacements whenever they expire. I’ve gone years without having to use my Epi-Pen but I still have several within easy reach regardless of where I am. I also have made sure that all the people I’m around regularly know where they are and how to use them.

Get evaluated for celiac and related disorders. This would be done by a gastroenterologist, which you will likely need a referral from your PCP to see. Given your inability to keep weight on, I would wager that you have some sort of malabsorption issue — the most commonly occurring one being celiacs. Celiac.org has a symptom list that might be helpful. Another one that has more info.

Have your vitamin/mineral levels checked, in particular Vitamin D. Low levels of Vit D can indirectly cause malabsorption problems. There are a handful of other vitamins/minerals that can cause the same thing, but they are almost always related to low D levels. Fix the levels, and you’ll begin to feel better, although you’ll never be able to undo the damage that’s already been done if this is what the issue is.

Try a stomach acid supplement and/or digestive enzymes. Low stomach acid is a relatively unknown problem that can cause malabsorption issues, amongst other things. I use this one because it’s cheap and I’ve yet to find one that works as well. Edit: This one is not vegan, but as I said, I’ve yet to find something that actually works and is vegan. If anyone has a suggestion, let me know. Keep in mind that every person is different, so what works for me might not work for you. For example, I have a friend with the same disorder as me, but these give her an upset stomach and the ones that she takes (don’t recall the brand) don’t do anything for me. If you don’t want to buy anything like this, you can test if this is your issue by taking apple cider vinegar. The usual starting point is a tablespoon taken about 20 minutes after you eat. For me, I found that I needed more and taking it before I eat was often more helpful.

As someone else mentioned, try pre- and probiotics. This is a brand that’s frequently recommended in the zebra, although I’ve known a couple people who felt they’re too strong. Edit: This one is vegan. This is something else that’s been recommended with good success. Two tablespoons daily, usually in the morning, although it’s more than fine to take more. I know at least one person who drinks it rather than water and swears by it. I also give it to my dog with stomach issues, and he drinks it exclusively even though water is also available. An electrolyte replacement would be a good idea as well. LyteShow (Amazon link) is the brand I prefer, but there are several other brands available. Stay away from things like Gatorade/Powerade and other “sports drinks”. While they’re good in theory, most of them are no better than soda.

Do some reading about gastroparesis, mast cell activation syndrome, dysautonomia, and autism in adults. They’re all related, and chances are high that you’ll at least find some insight into how to manage your symptoms even if you don’t find all the answers.

You are not alone, and your symptoms are not unusual. It’s not “all in your head”, nor is it a result of “being picky”. Unfortunately, it is up to you to advocate for yourself and find a medical team that won’t brush you off. In the meantime, I would strongly caution you about changing your diet suddenly. I understand wanting to change it, to be better as quickly as possible, but you can shock your system when there’s underlying issues. Take it slow, find things that work for you, and go from there.

Cabbage is actually a trigger for me, everything from the cabbage family including broccoli and cauliflower have bothered me.

Your case is the worst I've personally heard of, so maybe my triggers might work for you. Are you taking meds? IANAD, by my doc had me taking prilosec 2x a day when I first started and that helped, until it didn't anymore. Now I take protonix 2x/day before food, and 300mg zantac at night.

Maybe try ensure? I recommend butter pecan original, it's the tastiest flavor and the original didn't bother me like the plus did. Another thing to try is DGL, I mentioned it in someone elses' post but not here. This is the one I use and it's SUPER helpful, chew two half an hour before food and it helps coat your stomach so that food isn't so painful. Also try chamomile tea, it's supposed to help stomach mucus. Also, take super papaya with food once you can manage, it helps with digestion. But that DGL makes a HUGE difference.

Also try extra-watery rice, make it 3c water to 1c rice, it'll make it softer and easier to digest. Rice was the one food i could eat when I couldn't eat any other foods.

Hi, I had my gallbladder removed earlier this year.

First, try eating a good quality yogurt that has probiotics. (I eat a chobani every day.) Sometimes the antibiotics they put you on at the hospital can kill all the good bacteria in the digestive tract and yogurt with probiotics can help restore that. You would be amazed how that can solve digestive issues. If that doesn't help, I have some digestive enzymes I take with particularly fatty meals to help process the fats. I like the NOW Super Enzymes. They have definitely helped out.

But try the easy, cheap, healthy way first and start eating yogurt for a couple of weeks and see if that helps out.

I have never heard of weight gain being a side effect of gallbladder removal. If it hasn't happened in the two years since your surgery, then I wouldn't worry about it. I've lost weight and it's only been 5 months since my gallbladder removal.

Not knowing what you're eating, I don't know what to tell you other than be honest about the quality of foods you're eating. Try not to eat over-processed foods, eat fresh produce and fresh meats.

I also developed Vitiligo, another autoimmune condition during that time. My weight had dropped from about 110-115 (I’m 5’4”) to 95 pounds and my quality of life had deteriorated to the point where I honestly fantasized about suicide on a daily basis. My hormone levels were almost non-existent and the resulting depression and extreme fatigue only added to the misery.

I began to read and research extensively and decided to give AIP a try. I did feel better initially but after months of following the protocol became somewhat discouraged as many of my symptoms remained. I continued to read and learn and made some tweaks that I think really helped speed up the healing process for me.

The first one is L-Gluatamine supplementation. You can eat all of the healthy food in the world but if your digestive system is unable to absorb it due to a compromised gut you’re not going to benefit from all of the wonderful vitamins and micronutrients that your body needs to heal. The way I understand it AIP eliminates the toxic foods that are inflaming your gut but it can still take a long time to get back the essential mucosal lining that was destroyed by an inflammatory diet (especially grains and gluten). In addition to L-Glutamine this supplement contains other gut healing ingredients but it is pretty spendy, so if it’s not in the budget powdered L-Glutamine (about 5 grams mixed with water first thing in the morning on an empty stomach) will still help speed up the healing process.

The second thing that I did to help heal my digestive system and increase my micronutrient absorption was to start supplementing with HCl. Low stomach acid is incredibly prevalent but not often discussed and can be brought on by stress, a poor diet, medications (especially antacids), age, and other factors. Without adequate levels of stomach acid the food that enters your stomach isn’t properly broken down and the micronutrients aren’t properly absorbed. The third tweak that I made was incorporating offal (or organ meats) into my diet after I felt that my gut had healed enough to absorb them properly. What you eliminate is important but when your starting point is not a place of health that you simply want to maintain, but a place of disease and malnourishment, what you add into your diet is equally important as what you eliminate and organ meats are the most nutrient dense, healing foods on the planet.

First I tried to cook liver but honestly could not choke it down, the smell alone gives me a gag reflex, so I take desiccated (dried) organ meat capsules instead. I take Beef liver, heart, lung, kidney, pancreas, collagen, gallbladder, trachea, and spleen by Ancestral supplements. They do make a beef organ blend for people who don’t want to buy or take a shit ton of capsules like I do. I take 3 capsules of each organ with every meal which is equivalent to a bite, so that’s like eating one of each organ per week. When I incorporated the organ meats into my diet my vitiligo patches started to re-pigment. I am about 50% re-pigmented at this point but every week I see little but noticeable improvements.

The last change that I made was to incorporate intermittent fasting into my daily routine. Initially I was intentionally eating over my TDEE in order to gain some of the weight I’d lost when I was sick, I just consumed all of my food within a six hour window in order to give my digestive system time to rest and heal. These days I’m back to 115 pounds, symptom free, depression free, and full of energy so I IF maybe 4 days a week and eat close to my TDEE to maintain my current weight. I have incorporated some Paleo foods back into my diet so I’m no longer on AIP (it’s a healing mechanism, not a diet you need to maintain forever) but did so slowly and carefully after I felt that I’d given my digestive system enough time to heal.

If I eat nuts I buy them raw and soak them before I eat them. This eliminates the compounds that irritate and inflame the gut. Sounds like a lot of work but it really isn’t, you just plop them in a bowl, leave them overnight, and bake them in the oven on low or in a food dehydrator with the seasonings of your choice. I make big batches so I only have to do that once in a while.

I love eggs so those are back in my diet as well (pastured and organic only). When the gut is compromised the body reacts to almost everything, which is why AIP is so limited, but once the body has had a chance to heal and recuperate it’s totally possible to eat some of those foods again with no reaction at all.

For serrapeptase, I've been taking Doctor's Best which recommends 1 capsule / day on an empty stomach with water. I think I mentioned before, but be careful if combining with pain relievers and anti-inflammatories. Serrapeptase will thin your blood a bit, so combined with aspirin can cause low blood pressure and dizziness. It shows a lot of the same benefits as aspirin though, so you may find it to be a better option anyway with less impact on your stomach. I'm continuing to take this daily as the potential negatives seem low. More info here.

I've also been skeptical on supplements in general, but given the injuries over the past 3 years and the fact that I'm now 34, I'm trying to get any advantage I can to recover from workouts and continue performing at as high a level as possible for as long as possible. Other supplements I've been taking:

  • Daily multivitamin
  • Fish oil
  • Kelp — helps regulate your thyroid and hormone production related to metabolism. Careful not to take more than 225 mcg/day or it can actually be detrimental. Probably only suitable for folks who are working out / training consistently for these reasons. I use Swanson brand which is right at 225 mcg in one daily tablet.
  • Acetyl L-carnitine which supports energy, brain function, and metabolism. I use NaturaLife Labs, 2 tablets/day.
  • CherryActive Capsules — freeze dried cherry tablets which many pro footballers use as a nutritional supplement and that can also improve energy levels.

If marijuana happens to be legal where you are, that definitely helps. Not trying to be a troll I honestly had the easiest time bulking when I lived in Cali and had my medical card.

Other than that. I found powerlifting and strongman type routines made me much much hungrier than body building. I know some people are just trying to look good naked but you'll probably gain more dense muscle mass going this route then you can switch to body building when you're ready to cut.

Chocolate milk and protein powder.

Break up your meals into every 2-3 hours. Even if you can only eat a protein shake and a banana, eat something every 2-3 hours.

Something that worked for me was week by week id add another meal in. So 3 meals the first week. Then the second week id throw in an additional hamburger patty and 1/2 cup of rice. So on and so forth.

Hardboiled eggs are your friend.

Edit: I'm also lactose intolerant but I found lactose free chocolate milk at HEB. (Texas grocery chain)

No cardio unless you need to perform. To help with overall heart health try 20-30 mins LISS 2-3 times per week. Just remember the more you do cardio the more you gotta eat to compensate.

Digestion enzymes have been doing wonders for me. I have a pretty wimpy stomach myself. As in when I overeat my toilet looks like a murder crime scene. Not anymore after I started taking these.

Sounds to me like you're having some mild symptoms and blowing it out of proportion in your head. The mind can screw with you in weird ways. I think you should get some digestive enzymes and try taking one before every meal, it really helps break down the food and help your body process it better. I get these because I've always had issues eating large meals as well. It may be that you have some mild food allergies, but that can't stop you from eating, your body needs those nutrients! Maybe you could also try cutting out certain things to see if it helps, wheat, sugar, etc. Good luck!

You can take 1 a day, but you could also start with 3 a day. The first week I took probiotics I was extra gassy and bloated, but after that it was all good, may not happen to everyone, but just be aware. I think consistently taking them every day is the key, at least at first, to get them established. if I had to do it again I'd start with 1 a day for the first week, 3 a day for week 2, and then 1 a day for the rest of the bottle.

If you really want to get your stool in shape add fiber and a digestive enzyme. Probiotics helped, but fiber and digestive enzymes were the cure. For me it really didn't take much fiber, I buy fiber capsules and take 1 with every meal, which is on the low end of fiber supplements, but works wonders. I also take the digestive enzyme with my 2 big meals of the day, my breakfast is Quest bar, so I don't take the enzyme with that meal.

Long term, well I just don't know. Probiotics are not cheap, so after taking it daily for the first 2 bottles I have been trying different things. I've tried every other day, every other week, and didn't notice any difference, when I tried skipping it for a month I did notice a difference, but that may have been a result of some other things going on. In theory once you have it established it should be self sustaining. Unless you got the money to do DNA biome testing all you can do is listen to your body.

Good luck on your journey, if you are like me you don't realize how draining stomach problems are. Once I got my gut working I found I was more willing to just do things. When your stomach is all grumbly you don't want to do anything, and when that stops you suddenly find yourself more engaged in the world. At least I did, YMMV.

  • Pectinase is super cheap and will improve the flavor exponentially.
  • 6 gallon jug with 5 gallons of apple juice sounds more sensible.
  • Bakers yeast is fine, a tablespoon of egg white might help clarify that a bit if you care about that sort of thing. I don't.
  • Check to make sure there is no preservative in the apple juice. Frozen applejuice is super cheap with no preservatives.

    I like the idea of using moldy bread, I might try that in a single gallon batch of mead.

Getting started will cost a bit of money.

  1. I got this cheese making kit. Honestly you don't need that though. The kit contains cheese salt, rennet tablets, citric acid, cheese cloth, and a thermometer. For mozzarella you do not need cheese cloth and you should already have a digital thermometer in your kitchen (the one they give you isnt even digital). Cheese salt is just flaky non-iodized salt. The flakiness does help the salt incorporate into the cheese a bit better, but you really can use any non iodized fine grain salt for this. You can buy citric acid from the food store and you might be able to get rennet tablets there too (if not it'd cost you $10 on amazon). Whole foods sells citric acid in the bulk spices section and it'd cost you a nickel for enough acid for a pound of cheese.
  2. Next you need some lactase enzyme drops. I get the bigger bottle since it lasts a long time and I use it for making ice cream as well. smaller one is here
  3. Now for a recipe... I think I've been using this one here. It calls for twice the rennet as others... Not sure why. The cheese comes out fine so I haven't thought much of it. You should be able to get away with only using 1/4th of a tablet (instead of 1/2 a tablet) though.

    So to make it lactose free, you need to buy a normal gallon of whole milk that is pasteurized. NOT ULTRA-PASTEURIZED. It will say on the carton if its ultra pasteurized or just plain pasteurized. I've never seen any lactose free milk that is not ultra pasteurized. If you use ultra pasteurized milk, the cheese will not form correctly. So now you have a gallon of pasteurized milk and your lactase drops. I put twice what they say on the bottle into the milk (it says 5 drops per liter (about 4 liters per gallon), so I use 40 drops for a gallon of milk). I don't use it until two days after I put the drops in (instead of the 12-24 hours they say on the package). I also shake up the milk every time I'm at the fridge just to make sure it distributes evenly. Two days after treating the milk you can follow the normal recipe.

    I also take 4-5 of these pills when eating the cheese even though it probably is not necessary. I'd rather swallow a dollars worth of pills than risk ruining my day.

    Only problem is that the cheese doesn't seem to melt very well.

How much beano did you add? And you were in the last like 10% of your target fermentation, I bet it would've had a more pronounced effect if you had added it around 1.080.

I think if you had used something like WLP1056/Wyeast 001 or 090 you would have gotten a lot farther - those yeasts are more likely to progress farther on fewer fermentables. Do you ever get packets of amylase at your LHBS like this but parted out? You only need like an oz to make a big difference. I did an all pumpkin mash with amylase + sorghum extract that turned out really well with some holiday spices. Is it still in secondary right now? You might split the batch into a control and test batch. Then try dropping like a whole oz in 2 gal, and letting that sit for the rest of the aging process. If you end up with a different FG at the end of the aging process we will know the amylase is doing some work and not anything else.

They're certainly not Eastern medicine, and they can help improve digestion of certain hard-to-digest foods.

I would suggest you consider the FODMAP diet, or even a more strict elimination diet to allow your body to reset. Something like roasted chicken and brown rice is an example of a meal that should be non-reactive for most people. If you eat meal like this for 2-3 weeks, it should give your body time to heal. At that point you can start reintroducing other foods in a controlled manner to see which foods can trigger your symptoms.

Desperate like so many others on here, I got creative and decided to try something different. Hence, I bought some digestive enzymes on Amazon (link below) and they worked really well to combat the bloating!! The directions say to take 1 capsule before a meal. However, in my case, one capsule wasn't helpful so I read on the comments that many users recommend taking two instead. I actually take three! NOTHING has worked better and while it's not perfect, it's been the best solution thus far! Good luck!

I THINK they have less calcium than tums, but they do contain calcium nonetheless. I don't know if that would be a good alternative, maybe ask your doctor. I have experienced heartburn since I was a preteen I think but during pregnancy it was very often and it was so bad that my jaw and teeth would hurt. Milk and papaya enzymes were just about the only relief. I'd get heartburn after drinking water! I hope you find a way to get relief, it's definitely crappie to deal with.

You would need so much ginger that it would impart a very significant flavor to your beverage. You can go ahead and forget about subtle flavors in that case. Your best bet is to buy amylase on Amazon or at your LHBS.

Here's one option for amylase. This would last you through a huge number of batches. You only need a small amount for your entire batch, so you'll go through it very slowly.

If you really want to use natural amylase, get some malted barley and add it to the mash that you're going to have to make. You can pick this up at your LHBS too. They'll even help you mill it since you probably don't have the equipment to do it at home. Just ask for help and they'll give you what you need.

I'm 36 weeks right now and have had horrible heartburn since around 20 weeks... I was chowing down on LOTS of tums until my midwives told me to try papaya enzyme extract and it works AMAZINGLY. Check with your midwife or doctor to make sure they're ok with you taking it.. the bottle I have is this brand and on the label it says take 3 after eating, but my midwives said to take at least 6 when I need them. I found them at a local Whole Foods-type grocery store. It really does help and is also really tasty as well (they're chewable). Hope that helps!!

I started off taking Super Papaya Plus Enzymes but wasn't a huge fan of the ingredient list so I started looking elsewhere. I ended up finding MRM Digest-All on sale 2 for $30 at my local Sprouts and I've been taking this for about 3 months now and I love it. Gallbladder isn't hurting anymore, got a normal color in my movements again, and I'm going multiple times a day. I have way more energy because I'm not backed up anymore. I would suggest the MRM. There may be better, but this one has done wonders for my digestive system.

There's a good chance that since your body isn't used to the amount of fat you're eating, the fat is not getting broken down properly and squirting out your b-hole. I would suggest taking some enzymes until you adapt. Betaine HCL, ox bile, and lipase are the best supplements for this period, which you can get as part of an overall "digestive enzymes" supplement, like this one.

Check out this enzymes and this bile factors , my GB was removed like 3 years ago and I gain a lot of weight, I was used to get really sleepy after a steak, salmon, or any huge meal.(I mean it, it was dangerous to drive after eat any of those things). I’m a bit confused by your initial post, but if I’m reading this correctly, this is an extract beer. My remaining comments will assume this is correct.

The biggest issue with malt extract is that you don’t know the mash temperature. Therefore, you don’t know the fermentability of the wort. This impacts the attenuation.

Given where you are, you may want to consider using some alpha amylase enzyme. It’s used in Bruit IPAs to dry them out. You may need to add a small amount of sugar and more yeast to get it working though.

As far as flavor goes, anything goes. Dry hops, oak spirals, bourbon, fruit, etc.

In reference to u/wedgienoise4000’s comment about adding Brettanomyces, yes it can both dry out the beer and potentially add flavor. In most cases, Brett will not make the beer very sour. In low levels, you’re get a tropical character that pairs great with hops. In higher levels, you get an earthy, complex funk, but you should not get a tart sourness.

Buckets are really better as primary fermentation containers if you're using fruit, since it's easier to stir things up and mix the layer on top back in. This should still be fine, just try capping it and rolling it around a bit to mix that floating layer back in.

Also, when using real fruit, a bit of amylase enzyme can help break down the starches.

If your mother has an autoimmune disease, it is possible that you have one as well. Not necessarily the same one, but studies are finding that it may be possible that families may be prone to autoimmune diseases. This could also have something to do with with the inflammation marker. A few autoimmune disorders that come to mind are hyperthyroidism, graves disease, pernicious anemia etc, that could be related to your symptoms

Have you been tested for the Epstein Barr Virus or Mono in general? In some rare cases you can have lingering symptoms and malaise for over a year.

Given your odd liver function, I would think most doctors would also be interested to know what a liver function test would show.

I'd also stay away from any over the counter cleanses such as the one your girlfriend suggested. There are a few well regarded parasite cleanses available on the internet that can do much more harm than good.

As far as other supplements go, have you ever tried adding a probiotic to your diet? If not, it may be helpful. Although you usually have to take them for about a month to see a difference. Aditionally, i've tried the women's version of this product for my own digestive issues similar to what you mentioned with not digesting food fully and found that they have seemingly done away with that issue completely.

Definitely take all of my advice with a grain of salt though. I study infectious disease, immunology, and public health. I am not a doctor.

Digestive enzymes have really made a difference for my bloating and nausea. I used to get so bloated and nauseous after meals until I started taking these with every meal. This has caused the biggest improvement in 5 years for my IBS-C. The kind I linked to I believe has Betaine HCl in it which can cause heartburn in people that don't need extra stomach acid (like I do), but there are plenty of other enzymes available without! If this is something you haven't tried yet and you have nausea, bloating, and/or heartburn, definitely look into this.

Another supplement I used to use is Triphala. If you take it every day it can really help get your bowels moving if you suffer from constipation!! It worked miracles for me for about 3 months, but unfortunately my body seemed to get used to it and it stopped working. But damn those were a great 3 months, I felt fantastic.

Thankfully I've gotten better at managing it and haven't had any flare ups since 2017. Yeah it's hard to find out what is going on inside the body. For me, I've cut out all alcohol, grains, and fat. I just try to eat low fat protein like chicken and vegetables. It's not always exciting, but it's a hell of a lot better than getting sick after every meal.

Oh! I just thought of something. If you're up for something, please try these digestive enzymes they have completely changed my life. Even my mother in law has benefited from them. She was about to get her gallbladder removed and my wife recommended that she try these enzymes and they helped her with her stomach issues and she hasn't had any issues since then. It's basically just extra digestive enzymes that your pancreas normally makes when you eat. I dunno why, but it's really helped me.

I wish you a lot of luck in finding out what is the actual cause of all your pain. Try looking for a gastroenterologist if you haven't seen a specialist yet. They might be more helpful than a general doctor

What you could do is mix some rice up with Amylase and then any old wine yeast should do it. Just taste it to make sure its sweet and you should be in business. Just make sure that the rice isnt to warm when doing so or you will denature the enzyme.

Fucking lowlives. Sorry your mom got scammed. These are just general supplements that won't really do anything compared to a healthy diet. I wouldn't recommend buying them all. Maybe a multivitamin and fish oil, or a b-vitamin if she doesn't eat meat. Otherwise, they're likely a waste of money.

When I travel, I go with three items.

First, I travel with Digestive Enzymes. For me, these help with digestion quite a bit. I still try to avoid FODMAPs that trigger me, but if I accidentally consume some, these make it so I'm not in agony afterwards. Seriously, buy some now. They help a shocking amount.

Second, I bring peppermint tea and peppermint oil capsules. These really help minimize the length of flares.

Next, as a last resort, I bring anti-diarrheals. It sucks to be backed up, but it's better than the alternative sometimes. But if I use the enzymes, I rarely have to use these.

Compared to apples, most berries have very low pectin levels. Pectin is a chemical present in most (all?) plants, and contributes haze to beer, mead, and wine. Apples have some of the highest amount of pectin, where soft berries tend to have the lowest.

You may find that the apple meads take a very long time to clear, if they do at all. However, pectic haze is easily remedied by adding an enzyme to dissolve it (pectinase).

As previously mentioned, you have to do something to convert the starch into sugars. Koji produces amylase enzymes (which are also present in malt), that break starches down into sugars. If you're looking for something easier than making a mash or using koji, you can buy amylase enzymes. Basically mix your cooked rice with water and a bit of enzyme, and hold at 150F until the starches are broken down. Could be a few hours.

This is the probiotic I'm taking.

Before I started it I didn't have any noticeable digestion issues. But I don't think it was noticeable because this issues going on in my gut manifested into other issues like psoriasis/eczema, allergy symptoms, feeling crappy in general, and of course the hormonal issues. I've been eating low carb/no gluten or grains for a few months and I haven't had any skin issues or allergy symptoms. My lactose intolerant life was changed once I started taking these. In addition to the lactose digestion enzyme, they have protein enzymes as well. I pop one of those before my dairy sin and I am good to go.

Nothing is worse than the combination of caffeine and dairy for me. A nice coffee is killer, or a few slices of pizza with some Coke and I am in trouble if I forget to take my lactose pills.

You are going to need something stronger than Beano. It just doesn't have enough of the active ingredient to work properly. I was taking 3 Beano pills and it still barely helped. So I was researching it online and found out what the active ingredient was and then found another brand that had a higher dose per pill. I ended up trying this brand and it did work. I don't remember off the top of my head but I think you're supposed to take one pill before each meal that has the food that upsets your stomach. It's expensive though, but it works. My stomach is extra sensitive to all vegetables/fruits/legumes so I feel your pain.

How healthy are you in general? Do you normally eat healthy food? Have you tried taking digestive enzymes?

I used to have horrible indigestion and gerd where I would constantly have stomach acid coming back up with undigested food. The root cause was too much bad bacteria in my stomach. The gas from all the food they were eating was causing a lot of back pressure. It sounds weird, but the answer was taking acid supplements with my food. Essentially it kills the bacteria in your stomach and helps you digest the food instead of the bacteria.

I take this whenever i eat alot of protein and i have no more issues. It might be worth looking into.

You might try carrying some dairy digest enzymes with you, too. Lactase and maybe some other digestive enzymes. Papaya enzymes are very cheap and they work for me sometimes when I get similar symptoms. Sometimes dairy can be a bad trigger for me, usually with enzymes it's not. Eating dairy is usually no big deal, sometimes dairy plus cold air will trigger an attack. The enzymes seem to blunt the reaction a lot. I also had allergy testing (which put me into anaphlaxis, not good!) but dairy didn't show up as being something I'm allergic to. It's still a trigger for me though.

So, not a cuisine recommendation, but as a fellow FODMAP sufferer, I have found that digestive enzyme pills and papaya extract / enzymes help me somewhat. I use these a lot. I'll take 3 or 4 before a meal that contains problem ingredients. Still isn't enough for like lots of raw garlic, but seems to avoid the worst of the problems for something that just has a bit of cooked onion or the like. Could be worth a try, since avoiding O&G entirely is SO difficult, as you know.
