Two for you:

---Black Bean Soup

2 cans Seasoned Black Beans

1 cup "chicken" consomme. You don't have to use this one -- there are several of these broths available in kosher sections of various grocery chains (Cub Foods, Wal-Mart, Kroger) but always check the ingredients to make sure it's not actually chicken, of course.

1/2 cup of salsa

Dash of cayenne pepper

Smash the beans in a large pot with a potato masher. Add broth and salsa. Heat to a boil for ten minutes or until warm. Top with cheddar cheese or "bacon" bits (again, most bacon bits are vegetarian but Always Be Checking). Very tasty, filling and hearty for those cold fall/winter nights.

----I just call this one "Stew"

Cube 1 lb. of red potatoes. You can use other potatoes but it might take longer.

Make 1 cup of "chicken" broth (see above)

Squeeze the juice of 1 lemon into a cup

Grate or pre-grated 1/2 cup Parmesan (or an equivalent white cheese, if you are being careful of potential animal
rennets)

Slice 1/2 onion into small slices

2 T olive oil

Some spinach to make it vaguely healthy (recipe calls for two cups but, seriously, it's just as good with less or none at all)

In large skillet, heat 2 T of olive oil over medium-high heat. Add potatoes and cook until golden, 6-8 minutes, stirring occasionally. Stir in most of the onion, leaving just a bit to garnish later. Cook for 5 minutes and then add 2 cans white kidney beans (drained), the broth, and the lemon juice along with a bit of salt and pepper. Simmer until most of the liquid is absorbed (or not, if you want soup). Stir in spinach and cook just until wilted (about 1 minute only).

Vermacelli noodles broken to length, a good rice, and I use Osem Consomme seasoning because it has the herbs and spices already in it.

You would saute the noodles and rice as usual, then add a couple of teaspoons of the mix. Cook like you would Rice-A-Roni.

As for the onions, I usually plan on at least 1 pound of them, but it usually ends up being "all the onions in the house."
