I don't need/expect full shave or wax, but it's just a drag to go down on someone who's got a lot of pubic hair--and I LOVE going down.
I have pretty sensitive skin also, and had issues with both waxing and wet shaving--given that nicks/rashes increase your risk of acquiring an STD, that is not cool from a casual play perspective.
I have been using a trimmer (a wahl) plus this close shaver for several months and am quite happy with that combo. The close shaver is not quick--it usually takes several passes to get all the hair off--but I have zero skin irritation and my skin stays really soft. The close-shaver only works on hair that's already very short, so using the trimmer first is a must.
Personally, I find that I have greater sensitivity (in a good way) when I'm completely shaved, which is why I do it. I also think it's considerate of anyone who might go down on me. :)
EDIT: Just adding this--I personally don't consider it a positive thing that pubic hair traps moisture--unfortunately, for many people, that also means that it causes odor. It would be nice if everyone were super-conscientious about hygiene, but not everyone with pubic hair is going to go wash right before getting down (I wish they would). My body chemistry is pretty sensitive & I avoid anything that increases moisture (e.g., synthetic panties, pubic hair, etc.) because I've found that helps me avoid yeast infections. But I get & stay wet very easily, so maybe I have the opposite problem your wife has.

Hopefully that helps a little bit. I have found that pushing through a little bit of razor burn was worth it as my skin got more used to the shaving. But, from day to day, things tend to vary.
My friend runs her own boutique salon and offers body waxing services to both her female and male clientele.
Certain customers have very sensitive skin on the delicate parts of their body.
For those customers, my friend routinely uses the Seiko S-Yard ES412 Cleancut Personal Shaver.
This Japanese import shaver does the best job in getting as close as possible, but its blades and screen are engineered so well that the shaver can easily be used on the most sensitive parts of either female or male body without any danger of nicks or cuts on the skin.
She uses this shaver in tandem with Sween Body Powder, an ultra-fine grained cornstarch-based body powder, which allows the shaver to literally glide over the skin.
For men who come for the first time with a great deal of body hair, she'll first use a standard set of professional-grade electric hair clippers, like the Oster 76 Classic with its matching 00000 blade which cuts existing hair down to a 0.02 mm size, at which point the Seiko S-Yard can easily trim the remaining hair down to 0.0025 mm or less.
As others have mentioned here, you can get a decent shave with other personal area shavers like the Norelco Bodygroom Pro or the Schick Quattro Trimstyle, but if you want a consistently close yet safe shave of the genital region, the Seiko S-Yard is your best option short of using a razor.
You should use any trimmer with the guard on the balls. The Lawn Mower 2.0 has a ceramic blade, not a plastic one. Ceramic blades are supposed to cut closer then stainless steel ones. What I find curious is why you have to replace the blades of The Lawn Mower 2.0 so often. They state is for hygienic reasons. I'm obsessed with tweezing my facial hairs, but I try to keep them plucked anyway to stop myself from using my fingernails, especially around friends and family. I've been trying wax and I also bought a finishing touch brow pen, although I use it on chin and neck area mostly. I'm not sure if that's something you've tried or whether it would help but I will link to it. This shaver gets as close as possible to being a regular shave while not irritating the face by leaving the hair just significantly enough higher that I can very easily shave my face every day now, and save regular shaving only for the weekends plus not spend as much time and money on shaving cream and shit:)

I was like you, plucking every freaking hair, occasionally using a depilatory cream or waxing, both of which irritated the heck out of my sensitive skin. Then I saw this cheesy as-seen-on-tv device on Amazon with all these crazy amazing reviews. Since it's been out a while, I noticed there are more negative reviews now, but I still think it is a gamechanger. It has a teeny tiny rotating razor of some sort, and it shaves superclose. I know shaving doesn't sound that revolutionary (and the description of the device never used the word shave) but it somehow makes the hair grow back slower and a little softer! It doesn't make any sense, but it's amazing. No pain whatsoever! And, it's the size of a fat mascara tube so you can keep it in your makeup bag for quick touchups. Note that it doesn't work on coarse hair like underarms, but regular shaving is much faster for that anyways. With this thing, you have to move in a circular, overlapping motion to get all the hairs, but only takes a minute or two to do my lip.
Sorry if I sound like a shill, but I just love this thing! It's made my life so much easier.
Edit: I forgot to mention, when I grabbed the Amazon link earlier, it looks like they're releasing a newer model in a few weeks, and the old one is unavailable. I have no idea what they're changing, but obviously mine was just fine. If you're in the US, I've seen them at CVS and Walmart in the shaving section.
The Seiko CleanCut is awesome for once you get things trimmed down very short. Basically, after you shave down, you can use the Seiko daily or whatever to keep the stubble at bay. Because no blades touch your skin, you don't have to worry about irritation, and the Seiko actually does a closer job than most facial/leg trimmers.
You can also pick it up at beavershaver.com or seikocleancut.com. Both sites are run by the same company, and the Seikos are the same. Just one is more fun to type or talk about than the other.
Me personally, I'm lazy now, and I stick to a Remington Smooth and Silky to trim things short all over, and clean up a bit on the sides.
Edit to add - I used the Seiko for about 2 years straight and loved it, so if smooth is your thing, it's definitely something to consider, and well worth the price. The first time I went totally bare was with a Seiko, it safely gets into all the tight places where I was scared to put a razor!

I’ve tried waxing, threading, shaving- everything. It all makes me breakout, this is the only thing that works and is gentle enough that it doesn’t have any negative effects on my skin. It looks nice too, and it’s portable so that’s a plus.
It doesn’t work great on thicker hair (upper lip, unibrow and chin for me), I can usually still see that hair below my skin even after using this so I usually tweeze or use an eyebrow razor on those areas. But for cheeks, neck and forehead, the thinner hair that creates “fuzz,” this is perfect!
Let me just add- do. not. shave. I used to do it for years, I even thought it was “good” for my skin because it’s exfoliating. But since I’ve stopped the texture of my skin has been so, so much better. Shaving is way too harsh for facial skin. I have a lot of facial hair so I totally understand that urge, but trust me. Use a combination of tweezing and the hair remover I linked above- even if you have to do it every day it won’t harm your skin at all.

Heh, I bought a Mangroomer Pro a couple years ago, which is basically an electric shaver with a maneuvering arm on it. Let's you get everywhere pretty easily.
As far as I know, that's the only thing out there that is "quick and painless" that you can do yourself. It's not too terribly expensive either. Takes about 10-15 minutes to clean up the back. I use a Norelco Bodygroom for everywhere else.
My hair is coarse, thick, and dark so one of these days I'd love to have it all just lasered off tbh.

It. Is. Amazing. You barely feel anything, it just vibrates pleasantly and boom, all the hair's gone. As someone who has experimented with all kinds of ways of getting rid of back hair, I wouldn't recommend Nair. As others have said, Nair has a really awful chemical smell that has a tendency to linger even after you shower and wash it away, and you still have the same problem you do with waxing/shaving, which is that it's impossible to reach certain areas on your back on your own.
After years of trying everything under the sun, I highly recommend buying a Mangroomer. It's a little pricey, around $50-60 bucks, but it is super easy to use and is quality made, not flimsy at all. It's basically a back scratcher with an electric razor on the end. A lot of the reviews on Amazon say that the electric razor isn't powerful enough but I think those people just don't know how to shave. I have a ludicrously hairy back and I manage to get it all off on a regular basis.
TL DR: Buy a Mangroomer

Lol it’s incredible and easy to use and fast. So basically what I do is use this to buzz off the hair on top and below my brows to basically do a rough outline around the perimeter of brows then go back with it to shape the brow into the shape I want starting from the outside going in then I use tweezers to pluck any scraggy’s so its neat looking. But this is just how I do it. I use to just pluck but that hurts and takes forever to finish. I can do and maintain my brows fast like two minutes every other day or three. I like to shave my face because makeup applies more smoothly to my skin afterwards, and it just feels nicer to the touch. I've tried several different methods of hair removals such as waxing, those little eyebrow razors, or a plain ol' razor to no avail. I had a tendency to break out from all of them.
However, as skeptical as I am of "as seen on tv" products, I decided to give the Flawless by Finishing Touch hair remover a chance and it's been game changing for me. I don't have to pull on my skin, it's quick and painless, and it leaves my face feeling incredibly smooth afterwards. I use it about once every four or five days or so by just running it in small circles over my face for about three minutes and I'm good to go. I’ve had this for 3 years now, but I don’t shave my head smooth. I use the clipper end with no guard once a week on my head then with the guard to shave my beard. Perfect for top lips. As others have said hair will not grow back black & thick unless it was like that before you shaved. It may feel thicker but that's because you've cut it back across the widest part of the hair follicle. It will soften & go pointy again as it grows out.

Could you link me what you use? I was always told hair growing back in thicker/coarser/darker was a myth but that has happened to me after every time I’ve attempted, even when using one of these as it turned areas with previously blonde peach fuzz to areas with black hairs.
Just a regular ol' Wahl grooming kit. I use a 2 for the 'stache and a 3 or 4 for the rest, depending on how short I want it.

Sorry, but I have to disagree. I'm like a gorilla and I've gotten my back waxed quite a few times. First off, it's very painful. No matter where I go, I end up covered in blood by the time it's over. Second, it leaves horrible red bumps all over my back. Third, it's pricey and I don't have an extra $60 to spend each month on this. I bought one of these and it seems to work pretty well. I might get the hair lasered off when I have enough money.
edit: I know I said that I don't have $60 a month and then I said I want to get it lasered. I don't mind spending the money if it is permanent.
For the past several years, I've been using the Philips Norelco Bodygroom Series 7100. Use oil before shaving, and lotion after shaving - ball shaving is basically the same as face shaving.
It would be extremely difficult to hurt yourself with this thing. I have had only one minor cut in the years that I've had it, and that was from shaving too quickly.
