If you're looking for cookbooks proper, there's two that are the most popular: Laura Randolph's first Instatnt Pot book and Janet Zimmerman's book. I recommend the former for the newbie but both are pretty good. BTW, Zimmerman has a good dutch oven book I'd recommend as well.

I brought this over to a white elephant exchange last year with friends and it was a huge hit - the recipes are pretty good, but the erotica style writing is what really sells this cookbook. The recipes which involved string and tying are especially hilarious.

If you are looking for recipes that use ingredients others have mentioned Joy of Cooking or How to cook everything. Love them both. Joy is my go to for everything I need.
That said...
if you are looking for fast/easy you may be leaning on more packaged foods so that means canned soups, frozen/canned veggies, Stove Top Stuffing, etc. Chicken breasts tossed in a crock pot with a large jar of green or red salsa makes a great filler for tortillas/taco shells. Then just have whatever fillers you like. Very easy and fast. I have recipes that use canned soups, stove top, and the like. Again, easy and fast.
While some people think that it's heresy I think a mix of convenient cooking mixed with from scratch offers the best balance for the busy family.
As far as cookbooks I think Betty Crocker is pretty good at straddling that line.
Provided you don't eat all the meat off the bones, you can turn it into stock, soup, and, my favorite, pre-made chicken pot-pie with the frozen veggies leftover in the freezer. This is also assuming you keep staples like flour, shortening and assorted spices in the house. Also helps if you save ALL the pie/loaf tins.
I'm not a fan of brats, but you can get some good mileage out of sausage. Toss it in pasta sauce with the grease for deliciousness that can be frozen and reheated later, toss in with rice, soup stock and beans for epic leftovers, simmer with milk and a little flour for sausage gravy (WHICH IS GOOD ON EVERYTHING). You can even bake it into bread and it's pretty damn tasty.
I make most every thing from scratch, so my idea of kitchen versatility (shortening, flour, kosher salt, milk, eggs, veggie oil, butter) isn't going to much align here.

I definitely agree with everybody here who says to check out Youtube. The tutorials can be awesome! However, if you're new to cooking/baking, it can still be hard to know the terms and equipment they are using. Nothing beats a book for familiarizing yourself with these sorts of things. I recommend what I consider to be the Bible as far as learning to cook goes, "The Betty Crocker Cookbook". Assuming, of course, that you are American and will be using American measuring and temperatures.

You mentioned you want to learn how to make bread! I make my own exclusively, and I highly recommend doing that. Your own bread will be far healthier and filling than anything you'll buy in a grocery store or bakery, and you can add stuff to make it even tastier (my go-to is rosemary and sage). I only just learned to do it about a year ago, and was very intimidated by it because it seemed really complicated, would take hours and hours to do, might need special equipment (a bread maker) and I'd spend a lot of time and elbow grease kneading it. I was lucky enough to find, after a lot of searching, this video I'm posting below. This lady explains it really well and her method is super simple, turns out great every time. You can make sandwich loaves or rolls or whatever shape you want to make with it.

First of all, here is the "reddit cook book". I've made a couple out of here, and they're easy to follow and make.
My dad says one of my grandfather's favorite sayings was "If you can read, you can cook". While that's not entirely true since you need some coordination and stuff, the best way to learn to cook is to cook. Find some recipes online that have a minimal number of ingredients, and try making them. If they turn out shitty, use common sense to try to figure out what went wrong, or try another recipe. Epicurious and Allrecipes are good sites...I also highly recommend this book from food and wine. Almost all of those recipes are available online on their site, but having the book there and the ability to make notes in it is very nice. I've made just about every single recipe in there, and every one turned out tasty.
Once you get accustomed to techniques and flavours, you can start creating your own without too much of an issue as long as you stay reasonably simple. I wanted orange chicken, but didn't feel like looking up a recipe. I cut up chicken and cooked it in a pan till mostly done, then added various amounts of sweet chili sauce, sesame oil, rice vinegar, soy sauce, ground ginger, and two squeezed oranges, and then mixed some corn starch with water and added it to thicken it into a glaze. Tasted it and adjusted a bit till I liked it...bam. Done.
When you know what kinds of ingredients, spices, and herbs go in what kind of food, you can just play around with varying amounts and come up with something good. I'll often just saute up some onion and garlic, put in some fish or meat, toss in some rosemary, salt and pepper. Deglaze (that is when the meat is done, pour in a little wine and scrape off the brown tasty bits and make that sort of a sauce) and that's dinner over some pasta or quinoa or whatever.
So I rambled a bit, but...
tl;dr read, watch, and practice and you'll be able to make pretty much anything in no time.
yeah.. it is not for everybody. Some people think it is cute and some people hate it. I never claimed it was a masterpiece and I encourage people to read the reviews and decide for themselves if they want it or not. That is what reviews are for, right? And if you order it and don't like it... I encourage people to work within Amazon to return it.
It is a self published quasi-gag gift that has some decent recipes. I really do enjoy cooking. If you want Fifty Shades of Chicken that was made by someone from the Food Network and published by a huge corporation... it will be more polished and I say go for it.
The price point of the hard copy is the lowest that Amazon allows and, personally, I am proud of producing this thing that has sold quite a few copies with 99 reviews that averages 3.5 stars.
Me? I totally have spent more on less for a funny gift that was less useful. And today, this thing is free.

The worst Christmas I ever had was back in 2005. My husband was deployed to Iraq and he was really horny. I mean... really REALLY horny... all the time. Can you blame him? I did what I could but this was before the days of Skype or Facetime (or at least before it was common enough that we could use it while he was deployed).
So for Christmas I sent him a nice care package (can't remember what was in it - useful things, books probably), and he ordered a few things online for me and had them shipped to the house for me to open on Christmas day.
The day comes and instead of... hell I don't know what I was expecting but I certainly wasn't expecting what he sent. He probably gave me five or six presents, and every single one of them was a dildo or a vibrator or some other sex apparatus. Although it's so damn difficult to pick. If you were to only buy one cookbook, i'll go with the The Joy of Cooking majority. Buy it, love it, use it. However, those listed above are the ones i most love cooking from.
I really like Cree LaFavour's Poulet. Her writing can be obnoxious, but the recipes are all pretty good and the instructions are clear. You can also try just searching Amazon for chicken/poultry cookbooks.
I did a whole report for a college essay on the process of making Foie Gras. There's a very good book about it too called The Foie Gras Wars: How a 5,000 Year Delicacy Inspired The World.It's actually a pretty interesting read if you're interested more about the industry.
Everyone (especially me) should Do One Thing Every Day That Scares Them or if you prefer a more "traditional book", I can always use a 3 A.M. Epiphany. (I could use sleep too but that doesn't come in a book format.)

Speaking of really hard to mess up, Crockpots. You don't even really have to "cook". Just get the ingredients, throw them in the pot for 4-8 hours, and you're done.
