I own a 2016 Acer predator so i can't answer the 1st question but since 2 and 3 are general i will help you avoid some of the mistakes I made.
2. Check and monitor your temps. After about a year of usage suddenly my FPS for gaming tanked. I used Speccy and realised the motherboard was overheating. I opened up the laptop chassis and found that one of the fan connectors for the mobo was loose. Then the same thing happened but for the CPU and GPU. I changed the horrible gunk Acer calls thermal paste and voila-temperatures in high 60's to low 70's with a gaming load. My only regret is I over-tightened the screws and stripped some of them. Also clean the exhaust fans from time to time to avoid build up of dust which will increase your temperatures.
Get a good waterproof backpack to carry it with extra padding. If you use it for work and home(gaming) invest in an extra power adapter(don't need it to be the original one). That way all you have to do is plug it in and won't risk damaging the power adapter like I did. Plus its a real hassle to cable manage and carry the extra brick and cord.

Again a mistake not to use one from the start as it actually will boost performance since the CPU and GPU boost frequencies will be maintained if thermal throttling doesn't occur.

Hmm, it seems definitely better than the cheap generic Chinese ones. I found a Delta one, but that's rather pricey. After some searching, I found this one which has a load of good reviews and seems to be a quality product. However take my word with a grain of salt, it's hard to find a good product without forking out some extra cash.

I got really lucky during the Amazon Prime sale. I purchased a 1TB ADATA M.2 SX8200 Pro for only $100. https://www.amazon.com/XPG-SX8200-Gen3x4-3000MB-ASX8200PNP-1TT-C/dp/B07K1J3C23
My speedtests were pretty darn close to the advertised speeds. Despite some of the complaints about ADATA by Samsung fans, this has been a fantastic SSD purchase. I did have to be careful about which M.2 I purchased because I didn't have enough space for any of the M.2 with a big heatsink. I did apply the heatsink provided in the box. I tracked down a lot of the complaints only to find out they were for completely different products or they were installed without following instructions, like leaving the Optane setting enabled in the BIOS when they were trying to use the M.2 as a boot drive.

For the RAM, I chose Kingston (2x16GB) HyperX Impact Part# HX426S15IB2K2/32 I had to shop around to find the kit for $130. The 2666MHz speed and CL15 latency are right in the sweet spot for my processor. Plus, the sticks didn't have huge, preinstalled heatsinks. I don't ever want to dig through RAM specs again.

I think it should work. that machine is identical to my VX 15. the SSD M2 you show is SATA interface (has two little openings on the connector, vs. one opening nvme as in the https://www.amazon.com/Samsung-960-EVO-Internal-MZ-V6E250BW/dp/B01LYFKX41/ref=sr_1_2?s=electronics&ie=UTF8&qid=1504938211&sr=1-2&keywords=m2+nvme).
the Acer Aspire VX 15 has on M2 slot and the space for a 2.5 in disk for which the caddy you need to ask from Acer (at least in US). the M2 slot does not require anything special, in my ACer VX 15 accepts both SATA and the faster NVME interface.
