Any decent solar charge controller should have a low voltage cutoff if you run the load through it. The super cheap PWM ones might be configurable, but spending $120 for one like this was a reasonable investment for me:

There are obviously others out there that might fit your needs better, but I went with this one because you can use to view exactly what is happening with your system using an app on your phone. You can also set cutoff voltages to whatever you want.
My wife and I are probably a couple of years off buying a campervan, however you have gave me some ideas how we can convert our Vauxhall Zafira (MPV with fold down seats) in to an interim camper for overnight/weekend trips out. Be interested to know whether you have considered anything to cover the back such as:

I would suggest a Dewalt portable vacuum. Highly reliable. You can get a 60v 6amp lithium battery for it with a charger it last forewer, also runs from a cord. It is wet/dry. Commercial quality. I have one and it's crazy good!
