I saw you’re getting a scratching post. Great! Make sure you follow the personality of your kitty. I have two - one loves to be up high, the other loves to burrow under blankets or go in holes. So I got an almost ceiling high cat tree with cubby holes that satisfies both of them.
My girl cat loves this ball tower. Its great for solo play and it’s cheap.
Personally I/my family have always had multiple cats but you have to consider her personality again. It won’t a perfect fix on its own and you should have a backup plan if they did not get along. My parents have introduced many cats over 25 years and only had to rehome two (due to violence) but it does happen.
If you’re new to cat ownership then I’d really recommend the book Think Like A Cat for a great intro to the ins and outs of cats!
Jackson Galaxy’s Youtube channel is also a great resource for cat owners, you may benefit from his video on how to properly pet your cat. .
It would also be a good idea for you and your kids to brush up on cat body language,, as it can be very different than dog body language (which people tend to be more familiar with).
A pet fountain can really encourage them to drink. My girl loves hers! This is a link to what I have but there are different price ranges and styles out there. There is no need for a plug to be in the area. Cats actually prefer their food and water to be in different places. I have my cats water fountain sitting on top of a small table in my bedroom. I enjoy the water fountain for the sights and sounds and of course she loves it for the water.

Agreed - we’ve been using these since January with feeding 3x/day (5:30am, 3:30pm, 9:30pm) and the cats don’t harass us anymore for food since they don’t associate us as the meal givers. There are definitely nicer ones on the market but these have done fine. Awesome when we’re going out of town for a few days as well.
I have what's called a slicker brush. She likes it when I go at it pretty hard but you have to be careful you're not hurting their skin. There's little plastic bits on the end of the bristles.

My cat absolutely loved eating at my house plants so I got her one of these to put in the window she lays in. She really loves it : ) and it's supposed to be good for their stomachs but if your Cat is interested in plants you should get her her own for under $10
I could never use a front entry. My oldest cat would just poop out side of it (she's a really big cat so I think it was uncomfortable to her) and my younger cat would still fling litter out of it. This is the one I use. They both love it. Especially because after they're done pooping they can get on top and marvel at their creation.
It sounds like you don't have a cat any more, but they make cat doors with microchip readers for this use case.

My first thought is cable wraps like this or this. It won't necessarily stop her from chewing on it, but it'll keep her from chewing through it. If you're lucky she won't like the texture of the wrap and will leave it alone.
You can also attack the problem from the other end by getting the kitty more things to do/investigate/climb on/chew on. There are dedicated cat chew toys, or since you know she likes this particular cable you could leave it out (unplugged!) where she can get at it easily. Just watch that she's not chewing off pieces of plastic and swallowing them.
Cats also love running water, they make drinking fountains for cats just for this reason.
