I'll give you some violin selections that I have always loved.
Beethoven "Spring Sonata".
Bach Unaccompanied Sonatas and Partitas.
Tchaikovsky Violin Concerto.
I love Joshua Bell; check out anything he's released for some unbelievable playing and a wide variety of selection. I love this album and he did some amazing things with Edgar Meyer as well.

Try this German Requiem with Fischer-Dieskau and Elizabeth Schwarzkopf. Listen with the texts in front of you so you can follow the overall structure of the piece. More hair-standing-on-end moments per minute than any other piece of music I know.
