Not quite what you're asking but I'm putting in a plug for "A Stitch In Time," which is not a fan novel- it was written by the actor who played Garak. I think it's technically canon- it's definitely an official ST publication.
I enjoyed it partly because the background story is interesting- if I remember correctly, Andrew J. Robinson, the actor, created an intensely detailed background story for the character Elim Garak. Of course, the character's demeanor was so terse and cryptic that the story he'd created mostly served to inform subtle on-screen reactions, and the bulk of the details never made it to the screen. Mr. Robinson wrote the ("auto")biography to get it out of his head, to help make peace with, and let go of, the character.
I also enjoyed it because it was a good read, well-written, carefully thought out and contributed to my depth of experience with the series as a whole.
I definitely agree with this, Garak was one of my favorite characters and AJR put a ton of effort into developing him. I was thrilled when I finally got a copy of this book a few years back in an auction for cheap. I now have 2 copies and hope to someday have him sign one. Of all the Star Trek novels, this and The Good That Men Do (Star Trek Enterprise) are the two best Star Trek novels I have read.
Not about the Dominion War, but Andrew Robinson (the actor who plays Garak) wrote a book about his character's backstory, and his time after DS9, and it's actually quite good! It's called A Stitch in Time. I'd definitely recommend it!

I have one and I love it. Best mug ever. Also you can actually drink out of it, unlike the blood wine cup.

Terok Nor/DS9 from that Hallmark collection is over $50 dolla so not what OP was looking for. Me want so bad though.
"A Stitch In Time" is just fantastic. And it's written by Garak so you know it's all true, especially the lies.
"Hollow Men" is also amazing. It takes place just after "In the Pale Moonlight." Focuses on Garak & Sisko, as you'd imagine.
I love DS9 and I would be thrilled if someone got me this book as it’s rather rare and expensive for a mass market paperback.

Doing a bit of research, it looks like they're deeply discounting the full set, at least in the UK. Pre-orders are now being taken by amazon UK, with a price tag of only $158.50 pounds, or ~$250 US. Kinda pisses me off, because I've already paid close to (or maybe even over) $400 for just the first six seasons.
No word on a US release (which is pretty odd, IMO). It's worth noting that the one I linked above is listed as being region-free. If you're in the States, you should be absolutely certain before buying it from the UK that your player will play 50hz video, which is the British standard (US video is 60hz). Some players do, some don't. I can tell you from first-hand experience that no Sony machines in the US will play UK Blu-Rays.

Real soon here I will be putting up my tree, and the Hallmark DS9 ornament is one of my favorites. I also have the Enterprise, Voyager, and Defiant little ships that "dock" with it.

It's a fantastic read.
Interesting angle. Most images of DS9 we see are usually top-down. This appears to be the artwork that was used on the cover of the book, The Making of Star Trek Deep Space Nine, published in 1994. It's probably not fan art as the artist was likely commissioned to create it.
