I know you asked for recipes and not cookbooks, but I was in your situation a few months ago and I decided to buy the super easy vegan slow cooker cookbook. I highly recommend it! It has 100 recipes with easily available ingredients, but it also has tips on how to combine them, make easy side dishes and how to stock up the pantry. I'm doing one recipe a week and all of them have been tasty, affordable and liked even with people who are not vegan. I'm really gaining confidence with vegan cooking and with using the slow cooker, I even started to experiment more and changing some recipes to see what happens :D
I strongly recommend trying Indian brand ramen noodles. My favorite is Maggi masala spicy or "Maggi Atta noodles" aka whole wheat noodles. The main reason i say this is that the seasoning packet genuinely tastes like Indian curry and masala flavors. So you don't need to add turmeric or cumin powder or other seasoning to it. Just fortify it with other veggies.
The seasoning packet will also have dehydrated peas and carrots so it adds a bit of veggies to your ramen as well. But you can supplement it with other frozen veggies and frozen peas and fresh cut scallions etc.

I've made a similar dish before and typically also add a little finely chopped red onion to the bean mixture. Also I've seen black eyed peas used instead of black beans. Both are good, imo.
Disclaimer: I'm no expert.
I think the roller is a better option. The extruder I have is fun, but it's definitely a bit gimmicky. I just don't find myself busting it out too often... not to mention it requires a whole stand mixer to work. I do know there's other extruders out there, though.
A cheap roller would probably be easier to find and use. Unfortunately, I don't really have a good recipe for the dough, as I have yet to play with mine.
I've found a bunch of recipes while Googling (both machines), but I've always found that I've needed to make tweaks, and just go through trial and error.

vegan stoner cookbook~~
You can get spaghetti and fake meat crumble to make a nice meal. It's not so much about what you can eat, but how you can make stuff out of what you have. Try getting a vegan cookbook, they'll have a lot of the things you used to eat, but just substituted with their vegan counterparts. I've made chili in the crock pot, black bean burgers, pasta, spaghetti, quesadillas, burritos, stir fry, you name it.
