Hi! I was the lead developer on the 8ninths team for this project.
Networking is as simple as you'd expect, given that our app is built in Unity and can piggyback off of their multiplayer functionality (plus some custom stuff for syncing users' spaces, but most problems have been solved by Microsoft by now.)
The API is super easy to use. Much of the functionality that's new to HL is already beautifully implemented in game engines (we used Unity, which seems to be the easiest choice for HL for now) and the Microsoft custom stuff is sparse and clear.
I have been told that we can't talk about how long we've had the Lenses or worked on the app, sorry!
I thiiink we used this guy for development:

... don't have the machine directly in front of me right now to check, but something around those specs. We use the same machine for Vive and Oculus work, which is the only reason it needs to be so fancy and fast. You should be able to develop for HL on something very lightweight, depending of course on the complexity of your app. But IMO the best HL apps should be easy on any development machine.
I think /u/NomBok has the best advice if you truly need clickers and the accel/gyro inside. I don't know of a 3rd party device that small.
If you're flexible, these Bluetooth keyboard/touchpads work great and fit inside the HoloLens case, replacing the foam circle. https://www.amazon.com/gp/product/B015J6TEN8/
If you need smaller and just clicking, there are Bluetooth "presentation remotes" and "smart rings" that emulate mouse clicks, and maybe some mouse movements. We haven't looked at them.
There is a great article from Harvard Business Review which interviewed James McQuivey, author of Digital Disruption: Unleashing the Next Wave of Innovation about HoloLens being disruptive innovation and how it is different from Google Glass. Take a look, its a interesting read.
I'm in the same boat, but probably even more of a beginner. I picked up this book so that I could familiarize myself with the coding specifically for HoloLens, and not just dive into 'learning Unity'.
