So, an old boyfriend broke his back skiing. Luckily he had me to take care of him, but if he didn't, here's what I would have recommended.

Take advantage of any grocery delivery you can get where you live, and splurge for the pre-prepped ingredients if you can find them for the first month or so. A package of prechopped mirepoix, some cubed sweet potatoes, spinach, beans, seasonings and broth in a big pot with make a huge batch of hearty and filling soup.

Breakfast idea: Prechopped fruit, separated into baggies and frozen. See if you can get someone to come over and prep these for you by divvying up the fruit in bags, it can be a labor intensive process but worth it to get a stash of smoothies in the freezer. Add greens, protein powder, milk of your choice (I like coconut milk for the shelf stable quality) and blend. Keeping your protein intake high by drinking meals is easiest right now.
Clean your blender the easy way: fill with warm soapy water and blend, then rinse. Standing at the sink doing dishes is going to be very hard for a bit.

Search pinterest for "dump dinners", these are the "set it and forget it" of slow cooker meals. Things like add + prechopped veg + a bottle of some kind of sauce and you're set to serve a hot yummy batch meal over rice, with a mixed greens, etc.

For knives, I have a 10” chefs knife, a bread knife and a paring knife. Those three together fill pretty much all my vegetarian knife needs.

If you’re only going to get one knife, I’d recommend a 10”, or at least the 8” between the two you’re considering. The 6” is pretty small, which will make chopping bigger veggies really awkward (think onions, potatoes, that sort of thing). Even if you don’t prep meat, a decent size chefs knife is a really versatile kitchen tool.

Edit: For pots and pans, my most used ones are:

  • Nonstick 2 quart pot with lid (good for rice, cheesy things) - be sure to use rubber/plastic utensils on your nonstick, not metal!

  • Dutch oven (or big stock pot, good for soups, curries, pasta sauces)

  • Big steel frying pan (stir fries, one pan skillet recipes, curries)

  • Nonstick frying pan (good for eggs)

  • Other good basic kitchen stuff to have: baking sheets, spatula, rubber spatula, ladle, wooden spoons, colander, pasta scoop (not sure the proper name), cheese grater, liquid measuring cup, dry measuring cups and spoons. I have this utensil set and its a great cheap option.

OMG, I get to introduce you to an amazing vegan pantry must-have! Soy Curls are like Gardein Chick'n Strips and TVP had a baby. They're awesome to cook with because they come dried like TVP and you soak them in broth which you can season however you like. You'd then fry them in a pan or bake them. They're cheaper than Gardein Chick'n Strips and are shelf stable.

I love making this dish. It's one of those dishes you show people who say that tofu is a meat substitute. But it really doesn't require meat either. One thing you might want to try is getting Pixian Doubanjiang which gives it a signature red look and has a delicious flavour. It feels like cheating. The typical jar looks like this and has a different flavour to other types.

I also use TVP for mine and the more hardy style definitely fits well with Mapo Tofu over other substitutes that are more likely trying to be closer to ground beef.

Do yourself a big favor a purchase a double-walled tumbler like this one. It will keep your smoothie cold and cohesive. When I started my new job last year I'd prep my smoothie around 7, dump it into this tumbler, and leave it out at room temp until 10, when I had a chance to drink it. The smoothie would always taste as if I just made it.

Have you tried Pyrex? They make some larger dishes with lids that are probably meant for baking a meal for 2 that might work for your husband.
