IMO PC is the best choice if you have the specs for it. There's also a randomizer mod that adds quite a bit of replayability, if you're into that. If you go PC, go Steam. The W10 Store version can't be modded, and in my experience, the saves are cloud only.
In regards to Xbox vs Switch, I'd say go Xbox because Switch is a bit buggier (in rare cases preventing 100% completion on a save), and some speedrunning stuff was patched out during optimization.
The game is cheap enough to justify multiple purchases, if you'd like to show even more support to the devs. Maybe get a plush too. I'm getting a bit sidetracked, oops.
If you haven't purchased either console yet, You should make your decision based on what the Switch or Xbox has to offer you. Personally I'd go for Xbox purely because this game's sequel releases in 3 months (hyped af) for Xbox and PC, but outside of that the choice is yours.
I don't mind that I'm going to have to import this, but is it region free?
