I had some friends over yesterday and got to break out my volcano bowl. I made a Top Notch Volcano and a Rumbustion Punch, both from the Smugglers's Cove book and both very good. Tip to myself for next time: Don't try to squeeze lemon extract into the volcano after the drink is in the bowl. You're going to spill and give all the drinks some lemon flavor. Do the extract first, and then wipe out any spillage

OK, the music portion: I played the first 4 discs in the Vintage Hawaiian Treasures series and Hawaiian Memories. Really nice old island music compilations.

I highly suggest that you get a copy of Martin Cate's excellent book (tiki bible?) Smuggler's Cove: Exotic Cocktails, Rum, and the Cult of Tiki. That will teach you everything you need to know.

But, almost all tiki cocktails are rum-based. There are a few with other spirits, but fairly few. (Get rid of that spiced rum - you won't need it, and it's generally awful.) You can get as many opinions on rum brands here as there are posters, but as an advanced beginner, I'll give you my list:

  • An all-around rum - I like Plantation 5-Year
  • A black rum - Gosling's Black Seal is solid
  • An overproof rum - I prefer Plantation O.F.T.D.
  • A column still rum - Cruzan is quite good
  • A rhum agricole - Clement works well

    What you're looking for is style of rum, and country of origin. Around here we find the terms, "light, dark, amber" to be pretty useless as there are dozens of different styles and tastes of rums within each of those.

I bought a bunch of 16oz. glass swing-top bottles from a retail place called Chef's Emporium. I put pourer tops on them when in use and seal them with the swing top when it's time to put them in the fridge.

I love these! 8.5 oz is perfect for syrups IMO, unless you use a lot. I tend to have a lot of syrups on hand so I don't go through them all that quickly.

Thanks for posting this it's really cool to see these relics first hand!

I'd be interested to see how the official 80's bar recipes compare to the publicly released versions in the 1946 "Trader Vic's Book of Food and Drink" hardcover shown there and the 2005 Trader Vic's Tiki Party! book.

  1. Let butter get soft
  2. Microwave for 5-10 seconds
  3. add honey
  4. add syrups/pimento dram
  5. stir with spoon or whisk (depending on how much you make).
    The recipe given in Sippin' Safari makes enough for 2 pearl divers

    For extra credit, scale the recipe up and add a few grams of Ticaloid 210 S. That will prevent the butter from going back to a solid giving you something like a thick syrup. I haven't actually tried this yet, the idea comes from Liquid Intelligence.

I use a glass citrus juicer like this one. It has a little spout that makes it easy enough to pour it.

If I'm preparing for a party, I still use that juicer but put the juice into a Pyrex measuring cup that also has a spout for easy pouring.
