I got Native Forest brand organic canned jackfruit in water (well it has salt and lime juice too) from Whole Foods. Here's a link to it. I thought maybe I hadn't dries it enough, although I squeezed it pretty dry, or maybe that I could crisp it by frying it before adding the sauce? What do you think? I'm new to jack fruit so any advice would be great!

If you're looking to learn how to cook, I definitely recommend Rose Elliot's cookbooks. She's probably one of the most famous authors of vegetarian cookbooks. I taught myself how to cook using her cookbooks 20 years ago.

I also use the Vegetarian 5-Ingredient Gourmet cookbook a lot for simple recipes that are fairly easy to make.

I got this book from a friend in my early years of being vegetarian. There are easy recipes in here and lots of ideas to diversify your food. I'm 23 and I still use it!

Interestingly enough the original recipe for marshmallows is vegetarian, instead of gelatin they used to use ground roots of the marsh mallow plant as a thickener. If you can get your hands on some of that it would be cool to try making them the old school way.

A good place to start for you might be The Starving Students' Vegetarian Cookbook which has a lot of very "normal" and easy to make food containing easily obtainable ingredients. It isn't the healthiest cookbook ever, but for someone who is poor and trying to go vegetarian it's a good way to ease into it without having to subsist on fried food and cheese or learn how to make a bunch of weird new food.

And that's the thing: You don't have to completely overhaul your diet all at once. I think a lot of people look at all the options out there and get overwhelmed and discouraged. If seitan and tempeh and quinoa and amaranth sound weird and confusing to you then don't pressure yourself to start using them all at once. First figure out how to make a decent cup of rice and steamed veggies, then learn to read the labels of meat substitutes and compare them to make sure you are getting enough protein for your money. Hint: 4 grams of protein for a burger patty is not a meat "substitute"; it's a light snack.

All the weird food can come later when you feel more confident and want to branch out.

Go to an Indian foods store and buy a few of the foil packed heat and eat meals along with a bag of soya chunks.

I do this before I go on motocamping trips. They last forever, are cheap as can be, and taste great.

Buy a good vegetarian cook book. Go through and cook all of the recipes that appeal to you.

My favourite book is the Rebar: Modern Food Cookbook

I buy dulse from Amazon. The price is comparable to the Whole Foods near me so it's not a "deal" probably but I am addicted to it, I fry it up like bacon at breakfast!

You seem to be coming to terms with your ethics. You realize what they do to animals, and you don't want to be a part of it. I was precisely where you are when I read Vegan Freak (http://www.amazon.com/dp/B0010KRPW0), and it pushed me over the edge.

Try not eating dairy for a month (stop overnight). Think about it that way: it's just a month.

At the end of it, reassess. You may realize that it's not nearly as hard as you thought, and while you will still love the taste of cheese, you're doing this because of your own ethics, not for the love of certain tastes.

I would recommend reading Animal Rights, Human Wrongs: An Introduction to Moral Philosophy by retired philosophy professor Tom Regan. This clarified the moral dimension of the issue for me. For instance, if you still have persistent moral justifications for exploiting non-human animals, this book makes everything theoretically clear.

Peak fresh bags - you can wash and reuse them many times. You can buy them on Amazon. There's other similar brands but I've always used the peak.

Kness Tip-Trap can be bought on amazon for $3.09 shipped from the seller EntirelyPets

I used this trap to catch a mother and her babies last winter , I then relocated them next to a field and timber nearby. I put peanut butter in the one end and then waited , every few minutes another one would come out onto the top of the stove and into the trap. I would hear the door shut and go and place it into a larger container and when I had a few I went and released them , I end up catching 10-11 total , all but one being a youngster.

but the book idea mentioned here works as Ive seen it mentioned online at many sites and you can most likely relocate them today. Also, if you have prime account with amazon you can get the trap in 2 days from another seller or amazon for a few dollars more, whereas the item from the above seller would probably take 3 or more days.
