Yeah, that would be good.

I've tried all 3 as well, here's my thoughts:

  1. The noodles were better than expected, based on other people's reviews. If you expect the equivalent of a gluten-free noodle (even though they're not GF), you won't be surprised. Different, but not bad.
  2. Easy to cook. Boil water, cook for a few minutes. Easy peasy. I may have to invest in an electric kettle just out of sheer laziness (haven't tried the microwave method yet).
  3. I'd equate the soup flavor to store-brand soup. Pretty mellow. That's not a bad thing, as that gives you an easy foundation to build off of with your own flavorings & mix-ins.
  4. All of them had a bitter note to them. Well, almost bitter. Bordering bitter. I'm guessing that's the vitamin pack, maybe? I dunno. Sipping the broth at the end of the meal was when that aspect was particularly pronounced.

    So as far as mods go:

  5. Sriracha is your friend! As are Red Boat fish sauce, hoisin sauce, etc. if you're into sauces.
  6. Sous-vide is the way to go for perfect soft-boiled eggs (good for like 5 days in the fridge, if you want to do a make-ahead meal)
  7. I got a really great, simple veggie dicer gizmo (manual, not electric) for twenty bucks off Amazon a couple years ago. Onions, carrots, etc. are all super-easy to dice up, and can also be prepped ahead. I also just bought this mini mandoline from Amazon as well, which is another super easy way to up your fresh-veggie game (texture + color FTW!). Zucchini, radishes, spring onions, etc. can all turn into mini-frisbees with this thing with like a minute's worth of work. Having cubes & discs of veggies is a really simple way to take Vite-Ramen to the next level, especially if you spend five minutes twice a week doing some make-ahead meal-prep so you can just dump them into your soup.

    So an easy Vite-Ramen modification procedure goes like this:

  8. Pre-cook some soft-boiled eggs using sous-vide (up to 5 days in advance, if you shock them & stick them in the fridge after cooking).
  9. Pre-chop a variety of veggies for the week in little ziploc bags or reusable plastic containers (currently doing this twice a week, to keep them fresh post-chopping).
  10. Get a variety of sauces.
  11. = cook the Vite-Ramen, +drop in a pre-cooked egg, +stir in a sauce (or two), and +dump some pre-chopped veggies in. Voila! Extremely low-effort, highly-nutritious, flavor-boosted meal!

    Yeah, it's not quite like falling off a log, like with the instant noodles, but these are noodles actually good for you (not deep-fried + has actual nutrition content) & with a few simple preparation tweaks, you can actually create a really nice meal! I will definitely be buying another box to keep on-hand! I may try adding part of a chicken or beef bouillon cube to a future bowl as well.

Yeah, we've experimented adding some salt in the noodles but it doesn't make a big enough difference to justify the sodium increase. Our Kickstarter backers have had success with boiling the noodles in the soup; it's definitely something you can try. Some people have had success with the Rapid Ramen Cooker (made by another UC Davis alumni!), which they say helps infuse the flavors better, but I haven't tried it myself yet.

The flavors are getting a huge boost next version! Should be very distinguishable in v1.1, we've got some really cool new ingredients that we're super excited to incorporate in the ramen! There'll be a huge boost in umami as well. In the meantime, if you're not sodium sensitive, you're free to add some salt or MSG yourself if you'd like to kick it up a notch!

We don't yet have plans to change the veggies, but your feedback is helpful! It would definitely be cool to have more substantive veggies in there, but there's a lot of factors to consider there (supply chain, affecting overall flavor, overall cost, etc). Not a bad idea though :)
