When you are using fibre, you actually don't need a modem at all. It's a digital signal and a modem (modulator/demodulator) converts an analog signal into a computer readable digital signal.

You can get a coupler and a cable from amazon for pretty cheap, and I would imagine infinitecables.com would also have one.

What I did is I took the SPF out of the HH3000 and plugged it into an Intel X520 ethernet card. I plugged it into a computer running PFSense, and I have a PC running as a router. It's awesome.

I got FTTH and my cables are cat7 (https://www.amazon.ca/gp/product/B00HL862QK/ref=ppx_yo_dt_b_asin_title_o03_s00?ie=UTF8&psc=1), they are the same that I was using with Vidéotron, which were getting me 940Mbps instead of the 300-400 that I'm getting right now.

I know that none of my devices are able to get the full 1.5Gbps, but they should be getting close to 1Gbps, since with Vidéotron I was getting 940/940.

For wifi, I have a relatively small apartment and the HomeHub 3000 (so no mesh network) is in the middle, so all of my devices are on the 5Ghz with very good reception.

My devices are: 2016 TouchBar 13" MacBook Pro (fully loaded), iPhone XS Max, Apple TV 4K (connected via ethernet), Xbox One X (also connected via ethernet) and a HP EliteBook (my work laptop).

I just finished my network. I went with Ubiquity Unifi access points. They cost $150 ish on amazon, get the LR (long range) units, they have signal upto 600', but really its good signal for 150' with walls. I put 5 of them around my house. I had always had shit wifi signal, now I get full signal everywhere and I get WiFi in every corner of my property (1 acre).

They are access points, not a router (you can get the router but it's not necessary) you assign the same wifi ssid as your current setup so you get decent meshing.
