This is a similar one to the one he's using. $150. Completely reasonable to me. A knife is an investment. If it's something you use every day for years and years, a few hundred bucks is a completely reasonable amount to spend. And the difference between a good knife and a a cheap knife is something you'll notice every day. Plus if you look at the really high end knives, a few hundred bucks seems practically free.

Thank you! I have a Breville Barista Express and typically try to go for a more microfoamy texture using whole milk. I aim for 140-145 Freedom Degrees and not too much bubbling on top. I have found that, while the milk does come out nice and glossy, it is missing the thickness that allows me to do stuff like latte art. Do you have any advice on that? In theory the wand on that machine should be able to do it but I have also been told otherwise.

This is the probe thermometer I use. It works great and is a fraction of the cost of the $100 Thermopen Babish uses.

I'm still looking for a new oven meat thermometer, since mine bit the dust recently. If you don't have a clip, you could probably just use a binder clip attached to the side of the pot to hold the probe in place.

A lot more expensive than Babish’s, but you can take the top off, still read it with giant pots on it (numbers come out on cord) and it is extremely accurate.

It is America’s Test Kitchen’s most recommend.

Though, if you want visual style the etekcity looks sleek, can’t argue that.

Is this what you're looking for? I am not sure what the exact pan is, but I do know that this would be good for the smash burgers because of its large size.

Edit: His website says that be uses Lodge Cast Iron, this may be what he uses.
