that's really similar to how I make mine, except I use de-foiled backs. I use modern cards just for ease of access, but to be kinda authentic you could use Urza block foils. I foil peel the cards, and then glue on my printed faces. I'm currently printing on 15 lb paper, which is super thin, but not thin enough. I'm about to try dissolving paper so I can basically silk screen the ink straight onto the card. I'm aligning cardstock and printed paper using a 3-d printed card positioner I made, which is basically a frame that fits over the printed paper and allows me to drop the card on with perfect accuracy.

Buy this or an equivalent. For ~$10 you'll save yourself a lot of grief and heartache.
There are a few things to consider. First, the guillotine seems great but it isn't very accurate and requires more work than you think (the repetition). The blade is also easily replaceable. Don't do more than 1 sheet at a time. Can it be done? (Yes) But will it always off by a little? (Yes)
I have made extensive use of card stock terrain and have learned. There is also the high end option of purchasing a cutting machine but that is $100+ to get started.

Don't be too nervous about your cards either. Most people don't pull out your cards while they read them, and with the two sleeves I doubt anyone will notice anything strange.
