I am a chronic fidgeter. I fidget all the time. I cannot control it, so I have some koosh balls and have recently ordered myself a fidget spinner too. Otherwise I can draw, assuming there are no emails to answer.

A koosh ball looks like this, it's UK store but I'm sure US store has the same available. They are amazing to fidget with, but keep them in a plastic bag when in storage and clean them regularly. They are made of rubber and can collect germs, etc over time.

Get a knitting loom! Like this!

That way you can set it down and don't have to worry about dropping stitches. It's really simple and relaxing :)

This. Honestly, if someone wanted to steal information, airplane mode means the cell detector isn't going to detect anything. Better yet, buy something along the lines of this and you're good. Just treat your employees properly and the risk is mitigated

I can't install programs. I just ordered one of these keyboards https://www.amazon.com/gp/product/B01M4LIKLI/ref=ox_sc_act_title_2?smid=ATVPDKIKX0DER&psc=1

that can record without software, and I also bought a mouse just like my personal one with several programmable keys. Gonna map F8 and a few other functions to it, we'll see how it ups my productivity! (I feel like it is at least 5-10 minutes a day wasted, which over the course of a month... 4 hours of conversations that should go towards my bonus.)

A colleague of mine has one of these and uses it whilst dealing with annoying customers.
