Sounds like the pan is too hot when you’re adding the sauce. Use as much heat as you like to cook the proteins and vegetables, but let it cool a bit before adding the sauce. It can sizzle, but it shouldn’t smoke or burn. This is especially true if the sauce has sugar in it.

To clean I really like the Lodge scrapers, followed by either the Ringer chainmail scrubber or a Japanese tawashi scrubber.

I absolutely love my debuyer. Can’t go wrong with it imo. You are correct m, they are designed with a very slight raise in the middle of the pan (very slight, nothing crazy), supposedly to help prevent warping in be other direction which would cause it to spin on flat cooktops (I use glass-top electric). If you get debuyer I recommend the mineral B “pro” from amazon, as all of their other lines come with coated handles that are not technically oven safe. The “pro” mineral B’s are fitted with stainless steel handles with no coating and are really comfortable to hold.

There is a felt like material on the inside that holds oil well (I use mineral oil). I clean my knives well, dry them, and put them in their covers.

They come out with a very light coating of oil. Plus, the edges are protected.

I started with this one and it’s the perfect size for me, a Little over 11” at the rim and about 8” across on the bottom. Debuyer is a solid brand and the handle on this one looks great and is very comfortable. Unlike most other CS pans, the stainless handle on this series has no coating and is completely ovensafe. Debuyer pans are also thicker than some others @3mm so less chance of warping - but they are pretty heavy as a result.

I'm confused about that pan. It doesn't look like any DeBuyer pans I know. I can't find it on the DeBuyer website either. Might be a fake. It's also very expensive.

My biggest DeBuyer is probably a 12". It's very heavy as well. Not as heavy as a cast iron would be, but still heavy.

That looks like a better one. It's a 12.5" pan. It's even cheaper and it looks like the real deal. Although I can't know for sure because it lacks some pixels.

I have just completed this research mission and learned that the lighter carbon pans tend to warp. While forgiven on gas, clearly not a good option for glass top. When you mentioned high wall i looked up on amazon if there were more that were deep, the only one i could find was the Aus-ion. the rest look like typical skillets maybe a bit lower (cant really tell from pictures) I might use a crepe pan once in a while but nothing that often that makes me want to buy one RIGHT now.


are the other brands pretty reasonable on wall height?

I make pancakes all the time on this griddle with zero sticking. Do I use butter? Hell yes. But honestly I use exponentially more than I need simply because I'm not eating pancakes for a healthy meal. That and I typically want to have enough browned butter that I can immediately throw on the scrambled eggs as soon as the pancakes come off so everything is nice and hot.

I was in the same situation and went with the 11" and I'm glad i did. I think the 12.5" would have been too big and cumbersome to use as a pan. I'm looking at adding the 9.5" too.

Edit: fyi, my 11" pan weights almost 5.5 lbs, so it's still relatively hefty pan. If you really want something lighter I would get the 9.5".

I have two spatulas of varying sizes and their dough scraper... Obviously the dough scraper isn't used on the CS, but the spatulas are awesome. I also have a chainmail scrubber, but I don't find the need for it on my CS, just my cast iron. I find a plastic scraper, water, and a paper towel will take off anything stuck to the CS.

I have one like this. It uses cylindrical gas canisters. I’m am in Europe and they are very common. Any portable/camping gas stove will do though.
