This AA battery pack might work okay if you use the right 1.2 volt rechargable AA batteries. You'll get about 4.8 volts. That might work fine for a digital logic project. This is probably your best bet short of getting a hold of a variable DC power supply.

You are describing MIDI. While you might not use MIDI for what you want to do, there is no reason why you would not use the same information flow, software architecture, and sensors. Most basic midi controllers will give you velocity of the press (which correlates to pressure on the note attack) and fancier ones will give you "aftertouch" which is the pressure sustained on the button after attack. Some MIDI controllers will even give you aftertouch pressure as well as two dimensional directionality so that you can control one aspect of the sound rolling your finger side to side on the key and another param. Musicians are pretty picky about feel, and responsiveness of these kinds of things, so they way they build them will likely be helpful.
