Panini press grills both sides at once. They need not be expensive - the top rated Cuisinart Griddler is only $70 at Amazon. There are cheaper options and much much much more pricey options.

Electric grills aren't just panini presses. I use my ~20 year old Bosch to make panini style sammiches, yes, but also burgers, veggies like grilled asparagus, shrimp, kebabs, sausages, most anything that can get grilled. Get one with reversible plates - ridges on one side, flat on the other and you've got a griddle as well. Good for pancakes, eggs, you name it.

I have rosemary, thyme, and basil (and several other herbs) growing next to the patio just outside my kitchen door. Herbs are basically "wild," so just plant them and leave them (with occasionally watering when it's hot and dry), and you'll have tons of them available.

I put those three in lots of things, from fried eggs in the morning to the pot of vegetable soup I fixed yesterday afternoon. Fresh is much tastier than dried for most dishes.

And if you really get into unsliced bread (which I much prefer myself), I recommend a decent bread knife. I use this Victorinox, which is not expensive and works great. It provides the control to produce thin, even slices for sandwiches. My wife also likes to bake, so we frequently have hot, homemade bread for sandwiches, or just for eating with butter and preserves.

40 USD for an egg fryer seems a bit steep. I recommend a ring mold so you can fry round eggs for like 4 USD. Plus they're probably easier to get egg out of than something with hinges. Food for thought. Happy sandwiching.

This is a very good recipe. Dip a few onions to get the feel for how thick the batter needs to be, better to start a tad thick and add milk a little at a time until you think it looks right. I fried these in canola oil at 350 or so. These things are great for monitoring oil temps.

To anyone looking for a cheaper alternative, i bought my mom this slicer Works great! My favorite thing to make so far is philly cheesesteaks by thinly slicing sirloin roast. Also, have you tried making potato chips with your slicer yet Jeffrey?

Wow, I've never seen that flavor of El Yucateco before. I've had three of their sauces and right now I'm enjoying their XXXtra Hot Kutbil-ik Mayan Style sauce. I'll have to keep an eye out for it.

They're actually baked in one of these, cut in half, gutted, and filled with goodness. You can also buy sides of bread guts, which are awesome and carbolicious.

> -I don’t see any onion, but maybe it’s just under the patties. Make sure it’s finely diced.

It's not just a finely diced onion, it's finely diced reconstituted onions. If you are going for authentic flavour, this is key.

You could always go the amazon route. I was lucky enough to find some at my local grocery store.

It is, hard to describe beyond being a little vinegary, with herbs and citrus. Even being repulsed by the smell of vinegar, it's so good. Highly recommend. Here's a link to a giant bottle, but I used a 16oz bottle for roughly 2 pounds of boneless/skinless thighs.
