Yes, next update should add Escalations mechanics to bunch of stages, reworked/improved costume system and various bugfixes.
They also showed a new swimming (where your Gang Beast swims way faster and actually has a full swimming motion, paddling with the arms), the ability to swim in Grind's boiled "meat liquid" (albeit much more slowly than in water) and they talked about a Wheel remake to improve the stage's playa ilty and get it working Online (it'll be smaller, have only 6 cars and a smaller pier to have less physics-based objects to allow Online to not LAG like crazy, but the pier will also extend under the wheel, making it more safe to ride).

More, brand-new content will also be added eventuallt, like a full Story Mode (as well as more.modes, like Juggernaut and Playset mode) and more maps, with the only currently known one being Hotdog, which will be a rocking pirate ship attraction (this: https://www.hussrides.com/sites/default/files/header_images/classic-rides-pirate-ship1.jpg ) except shaped like a hotdog.
The reason there is a high chance it'll be that is because of the fact that you can see a rocking-ship-like thingy next to Wheel in the Beef City model when playing stages set outside, and the fact that there are two not-yet-used tracks in the soundtrack called "Hotdog Heaven" and "Hotdog Hop", number 20 and 41 in the game's track list: https://www.amazon.com/Gang-Beasts-Original-Soundtrack-Doseone/dp/B0788XWK76 .

I've used 4 Gamecube controllers with the Mayflash Gamecube adapter that has the PC/Wii U switch along with 4 Wii U Pro controllers with the Mayflash PC adapter and gotten 8-player to successfully work. I haven't needed to use any programs like x360ce so it seems as though it'll at least accept PC controllers (as opposed to Xbox controllers which likely work too). You just have to get used to how the buttons are placed, which is generally well-done on the Gamecube controller.

So, to more specifically answer your question, you can definitely use a basic Gamecube to USB adapter if it's the Mayflash one. The Nintendo one likely works with a bit more effort, here is an article that hopefully will help. Disclaimer: I haven't tested this method since I have the Mayflash adapter; also the article is from 2014, however the website seems trustworthy on the subject.

Also, I haven't tried PS4, Xbox 360, or Xbox 1 controllers, however I have had success mixing two different types of controllers (mentioned above) with success, so I would imagine it'd still work (as long as the PC recognizes the controllers).

Gang beasts will support using any number of 'DirectInput' devices. The reason I like to buy these is because they can be used for both 360 and DirectInput games, as some games support one mode and not the other. It's always nice to have at least 4 360 controllers for this reason, as there are many games that only support 4 360 controllers.

In addition, these are also cheaper than the 360 controllers.

They are very durable and nice to old - maybe more durable than the 360 controllers - especially for heavy spamming on the LB/RB buttons used to punch/grip in Gang Beasts. However, they have a slight rubbery feel - extra grip and doesn't feel bad at all. It's not a big issue, but you might want to keep yourself a nice Microsoft controller on standby for yourself if that's what you prefer ;)
