I as well have gluten sensitivity and PCOS. I don't see any help or relief of the symptoms. (If you do, that's great and I'll be super jealous!)

As for advice, it's not that terribly restrictive of a diet.

I don't like to buy marketed gluten free products. They're expensive and sometimes don't taste that great (Glutino is a fine example). If you need to, or want to, I suggest Annie's products (http://www.annies.com/). Everything I have had tastes great. Is pricey, but a nice alternative when I don't feel like making things from scratch.

Salads are a great option, just be careful, a lot of salad dressing use gluten as a thickening agent.

Lettuce is your best friend. It's a great alternative for bread. Burger lettuce wraps are delicious!! Anything you sandwich between bread tastes great wrapped in lettuce.

Eating out is sometimes a bit of a challenge. Don't be afraid to ask to have something wrapped in lettuce, or served in a different way without flour. A lot of places are understanding, and even incorporating gluten free options into their menus.

Xanthan gum will be your best friend in baking. Gluten free baking often comes out flat and stodgy, but xanthan gum helps your goods rise and be fluffy just like gluten!
This is a really great gluten free cookbook. It has an awesome flour blend that has nice results. I highly recommend you get your hands on it. All the recipes are sooo delicious.

I'm sure she has plenty of gluten free books but if she doesn't have these please consider them as a gift! They have been the only ones I've really liked so far.

Some of my favorite gluten free books are the America's Test Kitchen "The How Can It Be Gluten Free Cookbook 1 and 2" and also Russ Crandall's books "Paleo Takeout" and "The Ancestral Table".

These books have helped me so much! I didn't enjoy cooking before but these books helped me and everything I've tried so far has been delicious. My husband doesn't need to eat gluten free and he enjoys these meals so they've made our lives easier lol.

I'm not sure if your mom enjoys cooking or not but even if you buy these for yourself you can surprise her with a delicious and safe home-made meal or even cake! The ATK #2 book has a yummy cupcake recipes in it too! Everything from scratch even the icing! I made some funfetti cupcakes for a friend a week ago and she enjoyed them! She didn't realize they were gluten free lol.

Corn, Caesin and Soy can also cause 'major' brain fog.

It's unfortunately not just about the gluten. I'm one of those people I believe. It seems whenever I have Corn I get a 'mild' brain fog in comparison to my gluten brain fog. I've read somewhere that others say their corn response was like a milder glutening.

I probably have a Caesin brain fog problem too, but I refuse to test it and avoiding dairy has been very easy for me. I've been solid dairy free for 5 months. Gluten free 5 months too, but with lots of accidents along the way. Corn free for only 2 weeks, and its only now that my mind is finally getting REALLY clear. I can't even describe it :-)

You could go 'hard core' like I did, I dropped Gluten, Caesin, and Soy all at once, then when I realized Corn was messing with me, I dropped that too.

The clarity of mind as reward is all I need to never look at those foods again. I think if you get some of this reward, you'll easily see it this way too :-) (If not already).

Also, for breakfast, every day, last 5 months.

This one is a very fine milled flour blend. It's expensive for, oh wait, the subscription price is pretty good. I hadn't looked in a while. Anyway, if I really wanted to impress someone with my gluten free baking, I would get some of this. It made the most delicate cupcakes and cakes I've made GF. I've heard the Authentic Foods flours are also finely milled and give good texture but I haven't tried any. The other thing is a little trick I picked up which is to soak your flours for about a half hour before mixing the rest of the stuff in. It's pretty easy to do with cakes and such. I've occasionally soaked flours for bread but then you have to split the liquid so there's something left to proof the yeast in. Just takes some planning. This step just hydrates the particles and definitely you get less gritty results.

yes antibiotics can really mess up your system than what issues you had before taking them. And can i ask what made you need to take antibiotics for? and it will mess up your gut heath you need to rebuild the good gut bacteria you can start with pre and probiotics and other good gut heath foods and when you eat gluten foods what happens to you? also either when you wake up or just in the day is your tongue covered in white stuff? also if you can try to stay away from foods and things that have high fructose corn syrup and carrageenan in them here is a few things to help get you started

In addition to craving sweets, I also was a huge fried chicken fan. I still make really good homemade GF fried chicken using Pillsbury’s GF substitute (https://www.amazon.com/dp/B00OKI1LBA/ref=cm_sw_r_cp_api_i_usz4CbYXTNNST) for my breading. I buy it at my local grocery store here in Chicago but you can buy online if it’s not sold near you. You can use this for baking pretty much anything. I’ve used it to make fried chicken, hush puppies, crust. So check that out too if you haven’t yet!

If you take the Nestle chocolate chip cookie recipe and substitute the white flour for Pilsbury's GF flour, they are some pretty banging cookies. It's kind of expensive off Amazon, but it's the best GF flour I've found to bake with.

Gluten free ramen!! It's pretty close to real ramen. Not like - oh I guess this is a good substitute - but actually close (texture, taste, chew). I usually just make a chicken broth for the soup and add all of the toppings (chasu if I've got a lot of time).

Can you afford a bread machine? If so, buy a Zojirushi and then use this box of flour (GF Pantry Favorite Sandwich Bread).

If you get motivated, you can experiment with other bread recipes but I never had really consistent luck.

Tried this cake mix for a joint b-day cake form me and a non-allergic friend and my SO actually had to ask me if it was safe for me to eat because it tasted so amazing.

Only thing I would maybe do different is avoid pre made icing and make a healthier and less sugary cream cheese icing.

This cake is so tasty and moist, and I didn't even have any virgins on hand when I made it.

I take Similase GFGC every day in case of gluten, and i believe you can take a bunch after a glutening as well to help alleviate symptoms. try making your own indian and latin dishes. The ingredients are relatively cheap for the quantity (lentils, chickpeas, beans) and once you have the spices you're set. Also consider different starches - potatoes, sweet potatoes, GF oats, quinoa, cassava.

Someone asked about this a few months ago, and I seem to remember that the answer was no, none of the actual culinary schools officially offered GF programs; however, I might try The Culinary Institue of America. They have a GF cookbook on Amazon, so they might be open to tailoring a program to someone who is gluten free. It's worth looking into!

Also, have you thought about skipping cooking school entirely and trying to get a job at a gluten free-friendly restaurant in your town? A lot of great chefs never went to school, but just got started cooking in kitchens. If you could find someone near you who did GF cuisine, it might be worth seeing if they would hire you on. Just a thought!

The best flour blend I've found is from the cookbook Artisanal Gluten-Free Cooking. You have to mix it yourself (it's a blend of brown rice flour, sorghum flour, cornstarch, potato starch and potato flour), but it's worth it. I use it in all kinds of recipes and it's never failed.

They’re individually wrapped in serving sizes. At work, I put them in a little Tupperware thing, drop in a bullion cube or two and some cubed chicken, and whatever else. I usually just put it all together in the Tupperware at home and bring it like that. Then I put hot water from the water dispenser in it or heat up some hot water in the microwave and put it in there and put the lid on it to let the noodles soften. Really easy and really tasty.

It's kind of expensive and a pain to start up with, but once you get all the different flours it's not so expensive to just buy the ones that run out. The blend has a different amount of each kind of flour, so they don't all run out at the same time. I think it's 6 different kinds of GF flour blended.
