I don't think you should be looking for the graphic novel equivalent of a novel. The best video games, movies, and TV shows all take advantage of the unique properties of their respective mediums. Similarly, you should try to read graphic novels that can't be replicated in pure text format.

My suggestion to you is Asterios Polyp by David Mazzucchelli. I think this satisfies everything you were looking for -- it is a single book (not a series of comics) that can easily be read in a single day. This graphic novel deals with form and function in a way that a novel simply can't.

So I like comics but I agree with Jacob that overall, comics are simplistic and less interesting than regular novels. They can be charming in that aspect, but I understand why many people don't like them.

With that said, Persepolis fits all the criteria Jacob asked for.

Persepolis is an autobiographical graphic novel by Marjane Satrapi depicting her childhood up to her early adult years in Iran during and after the Islamic revolution.

I think the bartender might be a little off. Dole Whip is a bit hard to find outside of Disneyland, but there are a few places near me (SF bay area) that sell it. Heck, you can even [buy the mix on Amazon!] (https://www.amazon.com/Pineapple-Dole-Serve-Cream-Large/dp/B01666JBFG)
That said, I love Tiki Bars so I will take your advice and head to the Golden Tiki.
By the way, I also love Dim Sum but bad Dim Sum is...bad. Where did you go and would you recommend it?
