Thanks! In this case, I used a Victorinox 12-inch slicer as an experiment to see if I could get the uniform thickness I wanted by hand. I think next time I will drag out my meat slicer just for more uniformity and ease.

I've been using a Nesco American Harvest for about 6 months. Actually, the first one died but I sent it back and they replaced it.

It doesn't have a timer, but it does a great job making jerky. Mine came with a jerky gun kit and some of their jerky spice, which is fantastic.

Eastman Outdoors makes a prepackaged Whiskey Pepper seasoning that calls for you to add bourbon or whiskey to the mix. I've tried it and it turned out pretty good! It probably wouldn't be hard to copy if you aren't into buying premade stuff.

As a jerky enthusiast myself, I can tell you that getting a jerky board might just be the best purchase you ever make, after the dehydrator.

I might have to try that out if you don't mind me stealing your formula. I've been using this stuff for the past couple of years and am looking to change it up a bit.

I've tried a few online recipes as well but haven't found anything I'm really fond of yet.

Nice! You should try to cut your meat against the grain for a better consistency with chewing / tenderness. I probably wouldn't put wine in their either, it would add way too much acid or counter-act the umami IMO. I use a similar recipe with these that usually turns out pretty solid. I use kikkoman lite soy sauce instead of braggs but probably doesn't make a big difference.

If I recall correctly, I used CookinPellets Perfect Mix in the hopper and CookinPellets Hickory in an A-MAZE-N tube to add more smoke.

Add some Thai red curry paste to your standard marinade, or some Madras curry powder.

I picked up these and they seem to work okay, although I would prefer something that had a countdown rather than programing a 24-hour dial. If I were to purchase something again, I would go with something more like this.

You just have to put something over the trays, because they like a screen and your fruit puree will just fall through it. You could order something like this or you could try using parchment paper.

Just make sure your puree is thick enough that it won't run off the sides. You'll get a recipe book with your machine, and it'll probably have instructions for fruit leathers.
