There is a great book called The Frugal Paleo Cookbook: https://www.amazon.com/Frugal-Paleo-Cookbook-Affordable-Delicious/dp/1624140882

I borrowed it from my local library. It contains lots of cheaper recipes and tips for frugal cooking. I know paleo is not the same as keto but you can easily adapt the recipes to suit.

My go-to mince recipe is to make simple balls of mince with just some spices, put some kind of cooking liquid (stock, curry, tomato, whatever) in the slow cooker and throw them in. Serve as a soup, as a zucchini ‘pasta’ sauce, over cooked cabbage or cauliflower ‘rice’. Make lots and save some for another meal. Many butchers have bulk deals for mince.

I also tend not to eat special keto foods, like breads and noodles, except as a special treat. I stick to meat and veges and fats. Hope that helps.

I'm tearing through these cartons. Add to coffee. Add cacao powder to it with a natural sweetner for chocolate mousse, and protein powder to that if I'm low on protein. So easy and delicious, maybe my favorite keto ingredient.

What I want is to buy this and just pump it directly into my mouth, but that's not very keto friendly. They do have a sugar free version but I think it needs to be refrigerated.

I will buy some peppermint syrup to put in my coffee instead though.

I make other things - cheesecake/mousse/strawberry icecream... nope requests these and then takes some home



ingredients


  • 1/2 cup shredded zucchini (100g)
  • 1/3 cup plain yogurt chobani (80g)
  • 1 cup water (270g)
  • 2 tsp pure vanilla extract
  • 3 tbsp flaxmeal (18g)
  • 1/2 cup coconut oil

    ​

  • 3/4 cup cocoa powder (65g)
  • 1 cup coconut flour (135g)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup navtia/erythritol (150g)
  • Pinch of stevia
  • 4 squares of lindt 90% (optional)

    Mix first six ingredients and let sit for 10 minutes -

    Mix the rest in.

    Cook for 20 minutes. cut into 16 pieces.

    120 calories/3 carbs/3 protein

    I topped with

    1/2 cup cocoa powder (40g)

    4 tbsp natvia

    1/2 cup virgin coconut oil, melted (75g)

    1/2 cup of almond milk (heat this up otherwise the coconut oil will solidify)

    pinch of salt and few drops of vanilla til it tastes amazing

    whack in some protein powder if desired.

So I’m gonna assume these are exactly the same in only being 1 carb.

I may or may not have cleared the shelf of them at my local Coles lol.

Oh they’re 2.30$ each and there’s peach, apple and watermelon.
