I always did a combination of these collapsible folders (https://www.amazon.com/Smead-Organizer-Pockets-Closure-70902/dp/B0085IQ05I/ref=sr_1_1?ie=UTF8&qid=1502462258&sr=8-1&keywords=collapsible+folder) and then put the instructions into clear 3 ring binder sheets and file them into the folder based on labeled tabs. The larger sets with big instruction books fit perfectly into the clear pages. Ive had mine for 15 years like that and all are still mint. That way I can just buy a new one folder as needed when one starts filling up. My Harry Potter, Indiana Jones and Star wars all have separate folders.
If you only care about KR, [75139] which currently seems to be the cheapest route at the moment. It also comes with Finn, Maz Kanata, and 2x FO Stormtroopers. However, for most bang for your buck I personally would go with [75104] which is available on Amazon US at 33% off, or Bricklink for 46% off the RRP. Additional minifigs include; Gen. Hux, FO Stormtrooper Officer, FO Officer Female, 2x FO Order Crew Members (Reddish Brown Head/Light Flesh Head).
I think over time the Command Shuttle set will be more of a collectible item than the Takodana set. If you only care about the minifigs though, I would go with Takodana like u/SouthAausieJedi pointed out.

It's always bugged me that you can only display one side of a set when there's usually interesting details on the back or other side. So, I found a pretty cheap motorized display turntable on Amazon. Completely silent (to my ears) and really adds a cool element to my UCS display. I'll add LED's to it someday...

I picked two of these up last year and they’re great. Easy to build and lots of space for display.
Krennic's ship has been really discounted lately, and is extremely worth it. Such a great model. Get a thing called a floating bookshelf. It makes it so cool to have the wings out.
BTW the book is Guardians of the Whills by Greg Rucka. It's a brand new book that came out a few weeks ago. It's a short Baze & Chirrut book that takes place before Rogue One. It's VERY good. I've read it twice already.

I think it will look better in non-Lego form in the movie. And it's already down to $40 on Amazon. But unless Hux turns into a badass somehow, I'm also going to hold off.

You get what you pay for, but they are sturdy enough with decent depth. I keep the kids out of that room as well as the Roomba. I’m using them as a temporary display until I get everything assembled and put in permanent shelving.
