You've definitely got some z wobble going on, but that's also likely a belt tension (or maybe really worn Z bushings) issue as well. Make sure the belts are nice and tight. The Taz 5's are pretty old now. Mine just recently needed new IGUS bushings as the old ones were finally starting to show their age after just over 4 years. Do make sure the frame is all tight too.

The Taz5 has a small z wobble problem that gets worse (not as bad as what you're seeing) as it ages. I just recently did Piercet's Z wobble mod for it and it has pretty much fixed all the z wobble. Piercet has made several really great Taz mods. Look him up on Thingiverse and on the Lulzbot forums.

Since I was taking it apart anyway, at the same time I also converted the x rails over to 12mm to prevent a little sag when using the Dual extruder.

.1 is doable with the Taz, but isn't the best to test with initially, and a .5 nozzle may be a tad big for that. My usual go to layers are .2.

You can also use any e3D or such nozzle. I've found I like the Ultimaker clone nozzles as they are bigger and easier to keep clean.

The BLTouch works very well for me, I did a big write up on the forums about it and somewhat maintain a repo for the firmware on GitHub. Pretty sure I need to change the step values back to default though, can't remember if I've done that yet.

It may be overkill, but using rubber dampener mounts can isolate vibrations.
