I was looking though that sub and I can see how it can turn into /r/homelab but hopefully it doesn't. Insted of using DDNS I was just going to have my url point to my IP then forward to my NAS. I'm not worried about bandwidth since I'm on an unmetered plan.
As for redundancy I agree it's important. I was looking at buying three of these in RAID5. I'm not sure if I need a raid controller. I'm charting into new uncharted territory for me. But this should be fun.
Also my current router has OpenWRT on it so maybe that well give me some networking flexibility also.
Hey, I've found Intel chipsets work pretty well out of the box. If you're cool with using a PCI-e slot, this Gigabyte WB867-I Rev 4.2 card meets your requirements. FWIW, this is the card I'm currently using and haven't had any issues whatsoever. Good luck.

> MT7601
According to my digging, this AmazonBasics adapter uses the MT7601U chipset; it's cheap enough to see if it works.
If I was desperate, I would A team it and butcher a USB cable and with some cello tape to make the stick headers, you could do it! ;)
If you're going to mess around with your PI a lot, one of these might be worth having around https://www.amazon.co.uk/gp/product/B008AGDTA4/ref=oh_aui_search_detailpage?ie=UTF8&psc=1
