If it is just you in your home studio I see no benefit from upgraded from the Behringer 502 to the 802 unless you wanted to add in another microphone or soundboard. The 802 also allows a minimal mix-minus capability if you wanted to attempt to multitrack in the future with a digital portable recorder like a Zoom H5 Portable Digital Recorder .
I would encourage you to try a Knox Podcast Microphone or one of the although combo XLR/USB dynamic cardioid microphones. unless you are recording in a soundproof room if you are looking for better overall audio quality.

Does your 502 have a USB connection already? Are you looking at the 802 mixer version with the USB or without?

Audacity is fine to start out with. Eventually you might consider a dedicated recorder like the Zoom H5 since many people end up eventually losing a recording on Audacity due to digital hiccups.

Any USB mic plugged into a computer will get you started. Audacity is a free editing program and will do the job. You can record over Skype or Discord with an assist from one of the numerous recording programs out there.
There are people suggesting this that are getting downvoted. I don't know why. It's a legit way to get started.
Yes, your quality will not be great if you use a cheap USB mic. But if you're just starting out in podcasting, there is no reason to dump a bunch of money into it until you are absolutely certain it is something you enjoy doing.
Podcasting is a commitment, and everyone involved needs to be committed to making episodes on a schedule. There is no reason to spend hundreds of dollars on equipment on the chance that you or your crew get burned out after doing three episodes.
If this turns into something you love doing, then spend the money - one upgrade at a time.
All that said, if you really feel like you want to dive in and get some gear, I love my Audio Technica ATR2100-USB. It's on sale for $68 right now, and does both USB and XLR, which gives you some flexibility depending on your recording circumstances. It's a good launching point and won't break the bank.
Haven’t used this for podcasting...but the Zoom h6 is a great one for recording audio as a filmmaker. It uses a regular SD card, AA batteries, 4 XLR inputs with separate controls. We have them at my school and I love them, but again, I don’t have a portable podcast setup like what you’re looking for, so I’m not sure if this would work for you. It’s in Amazon for about $300 (ouch). Definitely take a peek though!

This is a cool idea, mouse pad material is pretty cheap and you could probably cover the entire table with it for less than $50. That would take care of people bumping their elbows and drumming their fingers as well.

The Zoom H6 has a ton of other applications besides just making podcasts. If you work in media, it's a tremendous investment to make that will pay for itself over time. And it's tremendous for podcasting. If you wind up recording more then two people, you have the flexibility to record up to 6 independent tracks. I also have a hack that I can use it to record skype interviews straight to the recorder. I whole heartedly recommend you buy one.
Mics are really up to you and what sound you want. I use these mics for my podcast, and they sound fine for my purposes. Not great, but good enough. I love them because they are not sensitive enough to pick up to much bleed from other mics.

Connect the MON OUT (monitor out) to a headphone amp and you're good to go. It's normal and beneficial to monitor yourself, as well.

Like u/BangsNaughtyBits (thanks for the tag!) mentioned, it is a lot of adapters, but we don't really have a simpler solution unless you can find a female Lightning to USB-C.
