first I would say get an electric skillet! that will help a little. is the micro in good working order? if so you can steam your veggies in there. Rotisserie chicken is usually pretty cheap. and can be morphed into many meals. I like to use the carcass to make broth so I usually pick most of the meat off. then freeze or boil it off right away and freeze the broth for later. here's a tip! You can make a large batch of rice, cool slightly and then portion into re sealable plastic freezer bags. seal and let cool to room temp before freezing. when you are ready to use; remove from freezer break brick in half (I flatten mine so that they stack better in the freezer) put into a bowl add 1 tablespoon of water per every cup of rice, cover and microwave on high for 1 to 2 minutes stir and serve.

You can often get different types of fish fairly cheap. I know I can often find frozen salmon for $5-6 USD/lb. Its not as cheap as chicken, but if you just have one fillet(~1/4 lb) it stretches. You can dress fish up many different ways as well. I think it might help if you narrow down the type of food you like.
One useful food "hack" that I used a lot in college is a rice cooker with attached steamer, such as this one.
Its quite useful for fast cooking and you can make a variety of meals quite easily in it.
Chopped onions, peppers and tomatos + rice, broth and spices = spanish rice. Throw a piece of fish in the steamer on top, add a little lemon and you have a nice meal.
You can do rice and beans as well. I have even used it to make pasta. If you get a smaller one, you can just make single portions and eat out of the cooking vessel after you remove it.

I do cold brew for my weekend coffee, and it's wonderful. Less acidic, smooth, and rich. I use a Hario 1000ml pot and use a coffee mill to medium grind my beans (~100g). Espresso blends are a good place to start, flavor-wise. Slowly pour filtered cold water over your grounds. Refrigerate for 18-24 hours. Discard the grounds and enjoy.

Simple syrup is crucial if you want sweetness. Even castor sugar doesn't dissolve enough. Simple syrup is... Simple. Bring equal parts (by weight) of water and sugar to a boil, stirring until fully dissolved. If you want flavors, just simmer for a while with either vanilla bean, lemon peel, cinnamon sticks, honey, lavender, or whatever. Cool and then store. You can even do fancy stuff like buy caramel or chocolate sauces.

Edit: The Hario pot is about $20,and a coffee mill can be had for $20-40. Get some Mason jars or spring-top jars from Goodwill/SA. Get good beans and make your own syrups. Cheap investment for the best coffee you've ever had.

I love a good taco salad. shredded iceberg lettuce, black beans (canned, rinsed and drained), or refried beans, sometimes whole kernel corn, sometimes chopped fresh cilantro, diced tomatoes, onions (green, yellow, or red), salsa, and or taco sauce (we like taco bell restaurant sauce), guacamole, and or sour cream. I like to serve them for fun in a tortilla bowl, they are super simple to make, spray both sides of the tortilla with oil spray and press into the pan and bake until browned and crispy. then just fill with your salad

That is pretty much the bible of recipe books. That book is an excellent resource and a great place to start, has pictures on how to cut certain things, and is just a wealth of knowledge for almost anything you need to know. Take your time and read how to use the book before you jump in. Many recipes rely on others, but the book is well written and cross referenced. Should be the best place to start.
I don't unfortunately. I eat it when I find it but it's so rare to see good Turkish food in the wild that it's just a cuisine I know I like and a few dishes I'm familiar with.
You might really dig The Flavor Bible if you don't know much about seasonings but want a good introduction to them. That book is what took my cooking from following recipes to modifying them.
Joy of Cooking and America's Test Kitchen Cookbook are both super highly recommended cookbooks based on both recipes and their value as references when learning new techniques
There really are so many options it's a bit ridiculous. The Flavor Bible is great for looking up spice and herb flavor matchings. It's always useful to find a use for something.

If you have a lot of basil, you could make pesto.
With the cilantro, you could make salsa or salsa verde.
For some reason i always think of rosemary with roasting, probably because it can stand up to the heat, unlike the softer herbs. New potatoes and shallots roasted with rosemary and cumin. Chicken with a paste of rosemary, lemon zest, salt, and pepper.
