I've tried this one on my first attempt and it simply just doesn't work with the snes mini.

Instead of that one try this:
https://www.amazon.ca/Adaptor-TUSITA-Charging-Adapter-Raspberry/dp/B00LTHBCNM/ref=mp_s_a_1_17?keywords=usb+otg+cable&qid=1565822608&s=gateway&sprefix=usb+otg+&sr=8-17

This was the one I ended up purchasing and works like a charm. Supplies power, allows additonal usb storage, and has the ability to add player 3 and 4.

How much memory have you got free on the system? IIRC each suspend point takes up 2-4mb of space (due to the rewind feature), so if you've got loads you might not have the space, crashing the system. Do savestates still work in the emulator itself?

Edit: if that is the case you can get 2 way 90 degree angle USB sticks that can expand the systems memory significantly, you stick them in the where you'd plug the power in and plug the power into the stick. Just make sure you get one with the right connector and is bent the right way so it doesn't obstruct the hdmi.

Think this adapter is the one I'm thinking of, you'd need to stick a USB stick in it though.

Thanks for the picture...unfortunately, it's not clear to me exactly what you are trying to accomplish. Are you simply trying to run things off of that usb stick? If so, this setup looks needlessly complicated. All you'd need is one of these: https://www.amazon.com/Yonisun-Micro-Samsung-Phones-Tablets/dp/B00JCZ2FQQ/ref=sr_1_17?ie=UTF8&qid=1541713088&sr=8-17&keywords=micro+usb+otg+adapter.

Or perhaps, I'm just not understanding fully.

Those hubs are known for their spotty build quality. There may be a broken solder or wire on the inside of the hub. You may be able to repair it with a quick solder, if you are into that sort of thing.

I use these. The build quality is much better, but there is only one USB port. https://www.amazon.com/AuviPal-Micro-USB-Cable-Power/dp/B07FY9Z9GD

400GB should work. I run 256GB SanDisk microSD's in five Nintendo Classics with zero issues. I find 256GB is way too large so not sure what you'll do with 400GB, but at that size, Now You're Playing With Power!
Here are my card specs. Any faster and the microSD card is more than the Classic can handle so it would be wasted $. https://www.amazon.com/dp/B0758NHWS8?ref=ppx_pop_mob_ap_share
