I did the Camino from St. John Pied de Port (France) to Santiago de Compostella once about 7 years ago and then a year or 2 after I tried it again but only got to do about 200 or so km's (did the first 100 or so then hurt my knee, took a couple of days off and then took a train to the end and did the last 100 km's).
Other peoples input on the money is right, 10,000 would be way too much for the trail. I wouldnt take that much with you on the hike (it could get stolen, it happens but I never really heard of it on my hikes). I had about 1,000 euros at one point and one of the women running a hostel told me it wasnt a good idea to have that much on me.
If you start in St. John they will give you 2 maps, one for the first day through the Pyernnes and one that covers the rest of the hike with elevations and distances.
This is the map book I took, I thought it was great. Its small and it had almost all the info I needed and was extremely helpful.

I did the extension to Finisterre and I would highly recommend it if you have the time. It takes about 2 or so extra days and it was great. Not nearly as many people do it and ends right at the ocean.
Some days you will likely end up sleeping on the floor (if hostels are all full). I would recommend bringing some sort of sleeping pad in addition to your sleeping bag so you are more comfortable. I didnt have a sleeping pad and sure wish I had brought one at some points!
Read up on how to treat a blister - you poke a hole in it using a needle and then working from one side towards the hole you squeeze out the blister. You dont just peel off the skin.
Bring some portable hand sanatizer to treat blisters/cuts and for general hygeine.
Breve historia de los Godos (Short history of the Goths), I can't recommend an English one but I'm sure there might be good ones.
The Goth kingdoms that succeed the Roman era is quite influential to our present, but IMO it's the most unremarkable era in Spain's history, too frugal. The subsequent Andalusi era and the Christian kingdoms are much more interesting.
It is certainly a quite sophisticated critique of "libros de caballería", "novelas pastoriles", (of which Cervantes himself was a relatively failed author), novelas moriscas, utopian novels, Spanish "remakes" of classics like Roland and King Arthur, and many other literary forms of the preceding century. Are you reading the novel in Spanish? If so, I recommend a critical edition with copious footnotes that point out the metaliterary aspects of the novel. None of the English language editions do a good job of this. This is a good one by Francisco Rico with the participation of many other scholars, as is the one edited by Martín de Riquer:

First of all, tell your niece she is amazing and will always be welcome in our land! (everybody is welcome, but she is even more welcome) ;)
In second place, and as an andalusian, I'm kind of "dissapointed" because most of the items are andalusians, and Spain is much more than Andalusia. Maybe you could try to purchase a book about Spain for kids along with all the items you said. Otherwise you'll end up buying tons of things, and this way you get your niece satisfied and introduced into lectures!
It's not a classic but the trilogy of Africanus, el hijo del cónsul by Santiago Posteguillo it's great, I've read it at least 5 times.
It's a historical fiction based on the Roman Republic and the second Punic War. It tells the real history of Scipio Africanus the Elder, the only general that defeated Anibal and the conqueror of the Iberian Peninsula.
Another trilogy by the same autor tells the real history of Trajan, the first Roman Emperor born in Spain.
Both are novelizations of history, but they're pretty accurate and very good in my opinion, he may enjoy them.
What you want is called access point. It is a wifi device that you connect wired to your router and it will improve drastically the quality of your wifi. Then you disable the wifi in your router. Any AP in the range of 50 euros will be better than the wifi's router. Something like this.
http://www.amazon.com/City-Walks-Barcelona-Adventures-Foot/dp/0811859118/ref=sr_1_4?ie=UTF8&qid=1344023514&sr=8-4&keywords=walking+guide+barcelona
This guide. It's a pack of 50 index-sized cards all geared towards different neighborhoods. Some are about history, some are about shops, some are about pretty views etc etc. I got these as a gift and am so happy I did. They are small enough to put in your pocket so you aren't taking out a big map and looking too much like a tourist.
Seriously, get this.
For 5€ more go for the Blu-Ray, if the chromebook has a Blu-ray drive. It is indeed an amazing series, I'm eager to watch the new ones.

Cuadernos Rubio. It is useful and also it is a spanish classic, when we were kids we had them to improve our handwritting.
The Kroger thing was just a one-time deal, it'll be long gone now. This is just the seasoning. At least rice is cheap: https://www.amazon.com/gp/aw/d/B0147MAYGQ/ref=mp_s_a_1_2_a_it?ie=UTF8&qid=1502372472&sr=8-2&keywords=carmencita+paella
A bit expensive, but how often are you really going to eat paella? I was lucky to get about 10 boxes of the stuff on clearance when that event was over, about $2.50/box with rice.
Have you tried amazon.com?
I found this kit which seems good to me (not pricewise, but not that expensive taking into account it must be a very niche item to buy).
BTW, You can search by "paella" as well as "paellera" as both terms can refer to the pan used to cook paella.
You would like to pay your respects to the King of England
from what Ive seen, comparing some prices of tienda.com to prices in spanish supermarkets, they are very very overpriced, I recomend looking at other suppliers like amazon https://www.amazon.com/Dalia-Sweet-Smoked-Paprika-Spain/dp/B0085WJOLG
The book The Arts of Intimacy might interest you:

Yo me leí como en 2011 este libro porque hay que estar preparada para cualquier eventualidad y que en su día me resultó ameno y pedagógico, pero se me ha olvidado casi todo. Tsk.
I bought a cheap router and worked really well: https://www.amazon.es/gp/product/B0031SUB4S/ref=oh_aui_detailpage_o04_s00?ie=UTF8&psc=1
> https://www.amazon.com/Badia-Yellow-Coloring-Bottle-1-75/dp/B0037AF0ZU/
This is a joke, right? Anyone making quality arroces in Valencia is absolutely using saffron.
Use normal rice, add yellow colourant. Just that. In Spain nobody uses saffron nowadays...
https://www.amazon.com/Badia-Yellow-Coloring-Bottle-1-75/dp/B0037AF0ZU/
In fact, my parents didn't like saffron in Paella.
Edit: normal rice in Spain, is the short one, like someone has said before.
