You can buy them on Amazon for about 4 bucks. Shipping is free but most are sent from Japan so expect it to take at least 2-3 weeks. I recommend it though! They're fun!

OP, there are two Jiro books. The one listed on your link is just pretty pictures with a little bit of information on each kind of sushi neta. On the other hand this one is more of a cookbook. For 266 pages, it's a deep book. It extensively discusses a number of different sushi neta, the anatomy of bluefin tuna, how he breaks it down, and how the quality of the meat changes in every month of the year. The book also tells you how to shape nigiri and it has a number of different recipes; unfortunately, the recipes don't actually have the quantities required for each ingredient.

Even though it doesn't list the amounts you need for each ingredient, I would strongly recommend the Jiro book I linked, and I would recommend against the Jiro book that you linked.

I bought this set and it has served me well. The two mats are nice because I like to make both styles with rice on inside or outside so I cover one with plastic wrap and leave the other uncovered.

Another bit of unsolicited advice but I have been impressed with how my rice turns out when I follow the instructions in Sushi for Dummies. It is a nice starter book.

I don't have easy access to an asian market but I have found that between Wal-mart and the Meijer's store the next town over, I can get most of what I need. It took a while but my local wal-mart started selling sushi rice.

Alright, so for rice cookers I was looking at this. Cheap and has some pretty good reviews. Do you think I should get the 10 cup version or spend a little few bucks extra on the 20 cup? I was also going to get this "Japanese Rice Washing Bowl"

For a bamboo mat how does this look?

For knives, I have a few thin ceramic blades. Do you think will those work well enough?

EDIT: I saw this knife on one of those weekly threads. I think I may spend some money and buy it.

I've got the Shun Yanagiba. If I had to do it again, I'd probably get something from Korin, but it's very sharp, has held it's edge well, and with most things, as I get more technique in my nigiri and sashimi cutting, it's getting easier to use.

The knife is well balanced as well.

If you are getting a traditional knife then consider also budgeting for a few types of whetstones. Learning how to use them and caring for a high carbon steel knife is part of the art and tradition.

I have these stones:

Seido 600/1000

Seido 3000/8000

Leather Strop (because it's a handy way to hone)

Flatening Stone (to level the whetstones after they show wear)

Japanese Cooking: A Simple Art has a really good sushi rice recipe.

You'll need a really good sharp knife, a specific kind of short-grained rice (usually just sold as "sushi rice"), sushi grade fish, and some patience!

Nigiri is difficult, but I say go for it if you really want to learn. If you are going to make maki, you'll need to buy the most expensive nori you can find. Cheap nori has a nasty nutty flavor to it that DOES NOT belong in sushi.

And it is DEFINITELY more economical! The amount I spend at the sushi bar for two people is how much I spend for six people to make sushi at home! It's just a way better deal.

pretty sure this one is the one I have, I use plastic wrap on it but I feel like I don't have that much control on it. However I don't really make sushi at home that much so for me it works well enough.

You forgot one of the main ingredients of Poke… Alaea... Hawaiian Salt

You probably can't get Limu where you are, but you can get a small amount dried, in this Poke Seasoning packet. It also comes with the Hawaiian Salt so you kill two birds. It tastes really good and authentic too.

i only use chopsticks when i go out for sushi, so i slip these on to any disposable wooden or the dishwasher safe hard plastic sticks many restaurants use, and nobody is the wiser about my normally inept stick handing.
