I haven't used AnyLogic and Simio but I find Rockwell's Arena easy to use and quite useful for modeling even complicating stuff. Simulation with Arena is a very nice textbook if you want to learn by yourself. I would suggest following a course's content and try to do all homework, which will give you a broad understanding of concepts, like this one.
This book Traffic by Vanderbilt is the best non fiction book I read last year. Just if you are interested in the how and why traffic works the way it does.

For a good treatment, you can go with White's Analysis of Queueing Systems. It's out of print, but the presentation is very mathematical.

You should note that analytical evaluation of queueing has fallen out of vogue to some degree with the rise of discrete event simulation software, so unless you're modeling systems that are 1) simple in terms of interaction and interdependency, and 2) require analytical solution methods, either from scale or otherwise, you probably won't find a lot of practical application.
I recommend this book for those interested in the subject.
