Most people don't, because it's been almost completely gone from the art for a very long time. I don't know if it ever even made it over to the western world. If you're a TKD fan, you should 100% read this book - https://www.amazon.com/Killing-Art-Untold-History-Kwon/dp/1550228250

The author took the role of a TKD historian, read old documents, interviewed key figures, and ultimately learned quite a bit about the origins of TKD. It's super interesting. That said, it is far more focused on ITF style TKD than other branches.... That said, this is where most of the practical stuff came from. I came from a mixed school of ITF, WTF, ATA, and Chung Do Kwan (masters/ black belts from each rotated teaching).

I started with a hubsan x4 h107d which has an FPV screen on the controller. But not being able to try full acro was definitely getting to me.

It's really not that bad to go fpv. I got these goggles to fly FPV with my Hubsan and I'm still using them on my big boy racing drone (though I've ordered slightly nicer ones). Then you can buy a decent transmitter, start flying in a simulator. Then build or buy a decent quadcopter. Not so bad when you take it in steps.

Sure, they do! They just aren't very good (though they are PDGA approved). Though, I must admit, when I saw one of these (also PDGA approved) in a Walmart for less than $5, I had to pick it up. Glow in the dark center, rubber overmold outer edge, and a consistent weight (160 grams) show just how far ahead of the curve it is! Flippy, and not very durable, but a good conversation piece.

I didn't remember the horses having ear plugs, but I did some reading and that is a thing. There are a few brands on Amazon.

The Jamaican prep cook I worked with ages ago taught me to put on an apron and an oyster shucking glove to shuck oysters. After a few weeks of practice I think I was at least nearly as fast as these guys. I wonder why they don't use the best tools for the job.
