I think the classic book What the Buddha Taught is one of the best starting points there is. It's a rather basic text, but at the same time it covers a lot of ground. Definately a must read. There are other more comprehensive introductory books, but they are a bit more technical.

Another amazing book is the Ven. Bhikkhu Bodhi's book In the Buddha's Words which is an anthology of just a few of the Suttas along with some excellent introductory essays. This book is probably the best introduction to Buddhist scripture out there. This book is the only one on this list that isn't available for free on the internet, but for a little over ten dollars, I'd say it is definitely worth it.

The Ven. Bhikkhu Bodhi also gave an introductory summary of Buddhism in the early 80's called The Buddha's Teaching As It Is which is quite good.

His Systematic Study of the Majjhima Nikaya is one of the best lecture series there is in my opinion.

You can find some articles he wrote here. I especially recommend the article "The Buddha and his Dhamma" and "The Noble Eightfold Path".

Sutta Central is probably the go to place for translations from the Pali Canon.

Also one of the best books on meditation (although it is a bit more technical) is the book Satipatthana: The Direct Path to Realization

If you want to practice meditation according to the Mahasi Sawadaw tradition, then read this pdf of Practical Vipassana Exercises is a very good book. Also, if you are interested in the Mahasi Sayadaw tradition I highly recommend the youtube videos of the Ven. Yuttadhammo

Ayya Khema's books are excellent. "Who is My Self" is a good one to read.

Bhante Gunaratana's books are also excellent. A standard go to of his is "Mindfulness in Plain English", which is available here for free if you don't feel like purchasing it.

One of the best ways to learn the Dhamma is to read the Buddha's discourses. You could start with "In Buddha's words" by Bhikkhu Bodhi, it's a selection of discourses designed to give an overview of the teaching.

You can also browse the Pali canon by subject, a great way to learn is just to think of something like "what did the Buddha say about X" and then go and look for X in the subjects.

You can also go on youtube and find these discourses explained in English by Western monks.

BuddhistSocietyWA have live meditations and sutta classes (i.e explaining the discourses [suttas] of the Buddha).

I enjoy the Pali which is side by side the English, which is good and helpful for memorization of the original version.

Different teachers emphasize different things. Mahasi Sayadaw, Pa Auk Sayadaw, Goenka, etc. all have different takes on Vipassana. Make your peace with that.

That said, especially at this early stage, you can hardly go wrong with one of the well known teachers.

True Theravada would be practice in accordance with scripture and traditions that are in accordance with scripture, that scripture obviously being the Pali canon. I see, so it's just larger than the other Nikayas, more cumbersome and expensive to translate and publish in full. Seems like what happened because of that is that choice selection of particular sections of it were translated and published, but not the whole thing.
