I'm sure there's plenty of specific details I'm forgetting, as well. I'm decent at being a Katamari of information gathering, but I'll be damned if I can remember where lots of it came from.
I bought this book and reference it from time to time, he goes over a lot of the tools and blender interface and then goes into a step by step process of building,texturing.rigging, and animating his character, I think if you register the book you have access to the online portion of his book/his materials. I think its like blender 2.6 something he uses.

IMO, that book does remarkably well for its age. Throw in the newest edition of "Realtime Rendering", and you're more or less up to date.

In my experience learning Blender from youtube videos doesn't work. Get "Blender for Dummies" book http://www.amazon.com/Blender-Dummies-Jason-van-Gumster/dp/1119039533/ and keep reading, at least a few pages every day.
