The Lamy will be the most reliable of the bunch, but it only comes with a cartridge and no converter. I'm sort of not a fan of the weird triangle grip on the Lamy, but it's fine once you get used to it.

I like the build and feel of the Jinhao over the Wing Sung, although the Wing Sung does look way cooler.
If you're dead set on the Wing Sung, https://www.amazon.com/Piston-Fountain-Transparent-Diversity-Color/dp/B077FHPKRM/ref=sr_1_7_sspa?s=office-products&ie=UTF8&qid=1520726740&sr=1-7-spons&keywords=wing+sung+demonstrator&psc=1 will get you 4 3008's for $16
I'm a writer. I take detailed and thorough notes in class as I've found that gets the information in my head best. (Also, that's the way I was trained as a mathematician in undergrad.)
My set up is several cheap fountain pens with a variety of ink colors and a good quality paper notebook. I hate spiral notebooks because the spiral eventually gets damaged. My A5 Clairefountaine notebooks are working out well.
The fountain pens are partly just because I'm older and the ballpoint pens tend to hurt my hands when I write for a long time and partly because they do force me to be a little tidier in my work.
