A quick read by Jack London:

A book of (much more modern) essays about the outdoors from the perspectives of very different people: https://www.amazon.com/Leaky-Tent-Piece-Paradise-Writers/dp/1578051274
Also, while not exactly a camping/bushcraft book, Sailing Alone Around the World by Joshua Slocum is a pretty fascinating book that obviously spends a lot of time on the outdoors.
Also, you might be interested in the Foxfire books/organization. They're a group that attempts to preserve traditional Appalachian skills and ways of living and while the vast majority of it is instructional, there's a lot of interesting writing involved as well.
While we're on that topic, Our Southern Highlanders by Horace Kephart was pretty interesting. While it is available for free online, the copy I downloaded was full of typos and weird formatting issues so I'd recommend buying an actual copy of the book.
And speaking of Kephart, once you get through with Nessmuk's Woodcraft and Camping, you should also check out the similarly titled Camping and Woodcraft.
Edit: I haven't read this but it just popped up on my recommendations and looks pretty good:
