Ah, after further reading (never worked with it before), it seems as if diatomaceous earth (celite) is used as a filter media for the fine dust-grade carbon itself . It (DE) is siliceous, therefore has limited absorbent properties. Due to its fine particle size and neutral phsyical/chemical properties, it is an ideal media for manufacturing single-use in-process filter beds during vacuum assisted filtrations.
Short-version - diatomaceous earth (celite) forms an additional super-fine filterbed on top of your normal buchner filter paper (or coffee paper if you're a cheapo), that assists in removal of fine carbon used for color-working product.
Personal suggestion/question - Why use celite? It costs as much as a low-micron fritted glass filter, and seems to just add more labor. Or alternatively, why not use fish-filter carbon? it is larger in particle size, and much easier to catch without adding another single-use product to your filtration process. (When I do this at home, I'd add the fish-filter grade carbon, and let it sit over night in the freezer, and pass it through a frit-filter, winterizing and colorworking in a single step)

Tip - To clean your fritted filter, use warm ethanol. Ethanol drifts in polarity depending on temperature, when hot, it picks up fats and waxes, and when cool, forces them out of suspension. So, when you get a fatty filter, just run hot ethanol through it.
