Luther did not remove them. In fact, while he didn’t consider them canonical, he did encourage folks to read them and he even included them in his translation of the Bible. He simply made them inter-testamental. “Apocrypha, that are books which are not considered equal to the Holy Scriptures, but are useful and good to read,” Luther said.

In fact, English translations included them until the 19th century when the British Bible society removed them from printing. You can still order the King James apocrypha from places like Amazon.

It was the Puritans and the Church of Scotland (Presbyterians) who pushed for the apocryphal books to be removed completely.

It is because of Luther’s views that I own and use an NABRE as my primary Bible even though I’m Lutheran.

I have this collection https://www.amazon.com/Lost-Books-Bible-Forgotten-Meridian/dp/0452009448/ref=tmm_pap_swatch_0?_encoding=UTF8&qid=1539492052&sr=8-4 which seems to be okay. Not sure how good the translation is but it’s probably decent. It has some junk like the Infancy Gospels (TBF they do have some interest because false prophet Muhammad got some of his ideas from these books.) but it also has all the works of the Apostolic Fathers that you list except for 2 Polycarp and Diognetus. I personally really like Hermas so far. I think you're referring to the Apochrypha. These books have complicated and often dubious histories and aren't taken very seriously by nearly all denominations.

It is worth noting that the KJV originally did contain these books. In fact, the translations still exist. From my understanding, these books were frequently not included in commoner's bibles mostly to save on printing costs and because they were seen as non-essential. The tradition has passed on to this day. It wasn't a deliberate theological decision by those who worked on the KJV.

You can find versions of the Apochrypha in English in nearly every translation. You'll have to buy a Bible which specifically contains them however. Most Catholic Bibles contain these books but only some Protestant versions do. Check the description of the Bible you are purchasing in order to confirm.
