I'm not familiar with what Poythress has done on Mathematics, so I can't say if anyone has done what he has done for Maths with Economics. There have been a number of people that have made attempts at "Christian Economics" of one sort or another. Much of it is pure trash - lipstick on a pig and all that. But there is some good stuff out there. Some things that I can recommend that are largely accessible to the general reader, with a bent towards a Reformed view:
https://www.amazon.com/Economics-Christian-Perspective-Theory-Choices/dp/0830825975) by Victor V. Claar and Robin J. Klay. Claar and Klay are both Economists so this book is a really good complement to Economic Shalom.
I will warn you that most theologians who write in this area just plain don't understand Economics. it's not just a matter of me disagreeing with them either (see Goudzwaard on the list above). It's really a matter of them not understanding what they criticize. Some of the few rare exceptions are John Bolt, Dan Finn (who is Roman Catholic) and Wayne Grudem. I don't always agree with them, but them, but these are the ones that actually understand what they are talking about. Grudem also has a list of books to cultivate a Christian view on Economics on his website. I wouldn't personally recommend everything on his list, and most of them aren't specifically Christian, but taken as a whole it's a decent enough list.
