If you have PCI-E slots available, you could save some money and get a internal capture card. Otherwise, you'll need to shell out the extra cash for the DVR type of box. Sadly, for a decent HDMI compatible capture card, it gets up there in price.

This can be a bit challenging, especially if you don't have any video experience. You can definitely just point a camera at the screen, but thats not the best way.
I use this to solve problem 1- HDMI Splitter One output to my TV, one to my Capture device. I connect the HDMI to this- HDMI to Component converter This strips HDCP and gives you a clean, HD component signal. The flow is PS3-HDMI-->Splitter-->TV and Splitter-->Converter-->recording device
I have access to a broadcast quality HD encoder so I don't have any recommendations for the actual capture device, but a quick google search found this- Aver Media
Some people have used this- Hauppauge Gaming Capture card Its input is component so you need the stuff above. The diagrams on their site show you using component through their device to the TV, I like splitting the HDMI better.
BTW- Monoprice.com is a great place to buy all the cables you will need also. HDMI, component, etc..

Need a reasonable quad core comp to stream with it.
if you want to actually have a window on your PC that is the wiiU instead of just unplugging your computer from the monitor your computer needs to have a capture card. I bought this one https://www.amazon.com/gp/product/B002SQE1O0/ref=oh_aui_detailpage_o08_s00?ie=UTF8&psc=1 specifically for that purpose with my switch. But if you're not a techy person then that's probably expensive and installing it would be difficult

This is correct. Your graphics card ports are output only. A Capture Card will give your computer a video input.
This is the HDMI capture card I use, with a PCIe x1 connection. You can also find HDMI capture USB dongles.
The software was the one provided with the card. It was so easy... you opened the software, it opened a capture window, you entered fullscreen and voila. Keep in mind I never tried to record anything, so I don't know the performance hit there. And I have to note it was a PCI card, not a USB dongle or capture box. On a ps3 alone I do not believe it is possible.

I actually just ordered one last night. A friend of mine has this one for $89.99 and swears by it, so I bought it. The downside she didn't tell me until after I ordered it was that I would need a 1-in-2-out HDMI splitter to stream. So that plus two 3-foot HDMI cables ran me another $26 altogether.

I'm not an av expert but it's been good enough for my needs, and the software that it comes with is decent.
You could buy a capture card
I bought one today.
I've used the Avermedia C027 card for the past year to capture my PS3 via HDMI (with a HDMI 1.3 splitter to remove HDCP). It also supports Composite, Component, and S-Video. It was $89 when I got it last year and has gone up a little in price since then.
The Avermedia solutions would probably suit you best. For an internal capture card this is a good solution: Avertv HD DVR High Definition. I have had really good recommendations for this capture card.

I wonder if you get a capture card with a component or HDMI input on it if you could record to a PC. I am looking to do the same thing. Maybe something like this:

I use this one with OBS without having to use that Avermedia Rec Stream or whatever it was called.
Plugged my TV Cable Box and Xbox 360 fine.
I use 720p 60fps which is what record my console games with. It does not do 1080p just 1080i.

AverTV HD DVR is what I use. AV/S-Video/HDMI. Around $90, found mine for $80. Plugs intot he pci port of your PC, so there are less cables and boxes around your setup.

I was going more for the HDMI capture card route. Right now I have a low price low resolution composite capturing device coupled with a splitter (that strips that pesky copyright checker). It's complete crap but it's what I have and the low res isn't going to justify me using it for live broadcast or extracting the episode from the DVR, DVR files are encrypted and since they took out the hard drives and went solid state, it's harder to extract them so just do it directly.

Game Capture HD is designed for recording, NOT streaming. (It's also somewhat outdated, as the Game Capture HD II does both component and HDMI.)
If you want to stream, you'll want something like this. You do need a free PCI-e slot in your computer though. This handles HDMI, component, composite, and S-Video.
Another option is getting the Dazzle DVC-100. It only does composite and s-video and plugs in via USB.
