You might want to consider the Canon EOS M, which is an inexpensive mirrorless camera well-suited for microbudget videojournalism and documentary filmmaking, as seen here:

With a [$275 Canon EOS M body] (http://www.amazon.com/gp/product/B00B2A1KEC/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00B2A1KEC&linkCode=as2&tag=battleforthew-20), a [$115 Canon 50mm f1.8 lens] (http://www.amazon.com/gp/product/B00007E7JU/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00007E7JU&linkCode=as2&tag=battleforthew-20) and a [$45 Canon EF to EF-M adapter] (http://www.amazon.com/gp/product/B00CJZDO1G/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00CJZDO1G&linkCode=as2&tag=battleforthew-20) [Referral Links] plus the free Magic Lantern RAW firmware modification, you can produce video that looks like this:

For sound, your iPhone will do a good job as a sound recorder as long as you have an external mic. You might want to consider recording to the [free Rode Rec LE app] (https://itunes.apple.com/us/app/r-de-rec-le/id590021166?mt=8) with a [$70 Aspen HQ-S for iPhone] (http://www.amazon.com/gp/product/B00MVK29BK/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00MVK29BK&linkCode=as2&tag=battleforthew-20) [Referral Link].

Here is how a lav/phone combo works (example is for the Rode SmartLav, but it makes the point for the entire lav/phone category):

This will give you high quality audio and video for less than $500.

Hope this is helpful and good luck with your documentary!

I agree with /u/da6id for the most part. But, if you're extremely budget conscious, i'd suggest the Canon EOS-M. You get the same sensor as a Rebel T3i (18 megapixels) but at a fraction of the cost (usually close to $250 or $300). I'd suggest buying just the body if you can find it. It'll be cheaper.

As for a lens, I'd suggest the [Canon EF 50mm f/1.8 II] (http://www.adorama.com/CA5018AFU.html?cvosrc=cse.google.CA5018AFU&cvo_cid=39345546331&gclid=Cj0KEQjwt7KiBRD9lOePpe_BhrgBEiQAHaS_10aw_BuoWgjdoHOHEUMtHfugpUOxxZ_lWHNThO2Iw-YaAs9M8P8HAQ) you can get these for $100 and it's a great little lens.

I'd also recommend a decent tripod, preferably one with a tiltable plate for portrait shots. These can be had for about $50 at your local Target.

If you're not ready to go with an interchangeable lens camera, you could check out the Samsung Galaxy Camera. It's a decent camera and it's got connectivity up the wahoo.

Lastly, no matter what camera you go with, make sure the artwork is evenly lit!
