I have a flowing water fountain for them, but it can be a real pain to clean.

This is pretty much it. The reason dry food is considered bad and causes UTI's is because cats often don't drink enough water (And it's worse for male cats). That's the issue, not the food. If you feed them wet food (And some vets will even recommend adding water to wet food), the cat will generally be hydrated enough, but it's not the food per se, it's just the water.
Alternatively, make sure your cat has good, easy access to lots of clean water. Cats are so fussy about water, so a water bowl left down for a couple of days is no good - you need to put fresh water down at least once a day, ideally more. Or better yet, get a pet fountain. They're not that expensive and if your cat likes it (Again, some cats are fussy bastards...), it'll drink like it's going out of fashion.
I second this, my cat developed kidney problems because she wasn't drinking enough water (also she's weird and prefers dry food to wet, so if I gave her both she would eat all the biscuits and leave the meat... strange kitty!), but I got her one of these and she uses it regularly and has had no problems since.
We use a water fountain for Thor. He i had the same problem with a bowl and now it's fine.
We also noticed he drank a whole lot more as well! We have this one....

Gone through a few different fountains over the years with the same frustrations of them being a pain to clean, or the filters having multiple ways of being slotted in incorrectly, or the pump being stupidly loud.
Finally found one that's actually really simple to clean, the filters are simple slide in/out and have a single orientation slot, and the pump is really quiet with an adjustable flow rate:
